SPICY SUN-DRIED TOMATO SAUCE

Spicy Sun-Dried Tomato Sauce image

Medium-spicy flavor, tangy tomato taste (only for real sun-dried tomato lovers) and a bright, sweetish accent from the touch of orange and cinnamon. Use the best sun-dried tomatoes for this recipe. Try it on pasta (I suggest about 1/2 cup per 4 ounces pasta) with parmesan cheese or crumbled feta or toss with beans. It would also make a terrific pizza sauce. This recipe is easily halved and the sauce can be frozen. From Angelica's Home Kitchen in NYC, voted 2006 best vegetarian restaurant.

SPAGHETTI WITH CREAMY SUN-DRIED TOMATO SAUCE

Categories     Milk/Cream     Onion     Pasta     Tomato     Sauté     Quick & Easy     Bacon     Gourmet

Yield Makes 4 to 6 main-course servings

Number Of Ingredients 9

5 slices bacon (1/4 lb), finely chopped
1 medium onion, finely chopped
1 large garlic clove, finely chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
2/3 cup heavy cream
1/2 cup drained oil-packed sun-dried tomatoes, finely chopped
1 lb spaghetti
1 oz finely grated parmesan (1/2 cup)

Steps:

  • Cook bacon in a 12-inch heavy skillet over moderately low heat, stirring occasionally, until browned and crisp, 6 to 10 minutes. Transfer bacon with a slotted spoon to paper towels to drain. Pour off all but 2 tablespoons fat from skillet. Add onion, garlic, salt, and pepper to skillet and cook, stirring occasionally, until onion is softened and lightly browned, about 8 minutes. Add cream, tomatoes, and bacon and simmer until cream is slightly thickened, 2 to 3 minutes. Remove from heat.
  • Cook pasta in a 6- to 8-quart pot of boiling salted water until al dente. Reserve 1 cup cooking water, then drain pasta in a colander. Add pasta and cheese to sauce and toss to coat pasta, adding enough reserved cooking water to thin sauce as desired.

Tips:

  • Choose high-quality ingredients: Use the best quality sun-dried tomatoes, olive oil, and Parmesan cheese you can find. Freshly grated Parmesan cheese will give the sauce a much better flavor than pre-grated cheese.
  • Don't overcook the pasta: Cook the pasta al dente, or slightly firm to the bite. This will help it hold its shape and texture in the sauce.
  • Use a large skillet: A large skillet will give the sauce plenty of room to simmer and prevent it from becoming too thick.
  • Add the sun-dried tomatoes and cream last: This will help prevent the sun-dried tomatoes from becoming too tough and the cream from curdling.
  • Season the sauce to taste: Add salt, pepper, and red pepper flakes to taste. You can also add a pinch of sugar to balance out the acidity of the sun-dried tomatoes.
  • Serve immediately: Pasta with spicy sun-dried tomato cream sauce is best served immediately, while the sauce is still hot and creamy.

Conclusion:

Pasta with spicy sun-dried tomato cream sauce is a delicious and easy-to-make dish that is perfect for a quick weeknight meal. With just a few simple ingredients, you can create a flavorful and satisfying dish that the whole family will love. So next time you're looking for a quick and easy pasta recipe, give this one a try.
