Provided by Food Network Kitchen

Time 25m

Yield 4 servings

Number Of Ingredients 9

Kosher salt
1/4 cup extra-virgin olive oil
6 cloves garlic, thinly sliced
3 tablespoons tomato paste
1/4 teaspoon red pepper flakes
1 cup frozen peas, thawed
10 ounces angel hair pasta
1/2 cup fresh basil, roughly chopped, plus more for topping
1/2 cup grated parmesan cheese (about 1 ounce)

Steps:

  • Bring a large pot of salted water to a boil. Heat the olive oil in a large skillet over medium heat. Add the garlic and cook, stirring constantly, until the edges start turning golden, about 1 minute. Add the tomato paste to the skillet and cook, stirring, 1 minute. Add the red pepper flakes, then add 1 1/2 cups of the boiling water; stir to dissolve the tomato paste. Simmer until reduced by half, about 5 minutes, adding the peas halfway through. Season with salt.
  • Meanwhile, add the pasta to the boiling water and cook until softened but not cooked through, 2 to 4 minutes. Reserve 1/2 cup cooking water, then drain. Add the pasta to the skillet along with the basil; toss over medium heat, adding more of the reserved cooking water if needed, until the pasta is al dente. Remove from the heat and stir in 1/4 cup parmesan. Top each serving with basil and the remaining parmesan.

Summer Fresh Pasta with Tomatoes and Prosciutto image

A quick, easy, and flavorful fresh pasta dish that showcases the summer's garden bounty! This recipe came about in an effort to use up a few more of those wonderful home-grown tomatoes and fresh basil. Everything was on hand and was easy to throw together. For garlic lovers, the second time I made this dish I used a garlic-infused olive oil; amazing! A crisp green salad is the perfect accompaniment. Enjoy!

Categories     One Dish Meal

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 9

1 lb pasta (we like penne)
1 medium onion, chopped
1 tablespoon olive oil
2 cans diced tomatoes
10 ounces frozen peas
1/4 cup fresh basil leaf, chopped
1/4 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes

Steps:

  • Cook pasta in boiling, salted water until al dente.
  • About a minute before the pasta is finished, add the frozen peas to the boiling water.
  • Drain pasta and peas.
  • Meanwhile, cook chopped onion in olive oil over medium heat until tender.
  • Add diced tomatoes, basil, cream, salt and the pepper flakes.
  • Stir and heat, but do not boil.
  • Serve sauce over pasta.

Tips:

  • Select ripe, flavorful tomatoes: Choose tomatoes that are deeply colored and have a firm texture. Avoid tomatoes that are soft or have blemishes.
  • Use fresh or frozen peas: If using fresh peas, remove them from the pods just before cooking. Frozen peas can be used without thawing.
  • Cook the pasta al dents: This will ensure that the pasta retains its texture and flavor.
  • Use a good quality olive oil: Extra virgin olive oil will add a delicious flavor to the dish.
  • Season the dish to taste: Add salt, pepper, and other seasonings to taste. You may also want to add a squeeze of lemon juice or a pinch of red pepper flakes.

Conclusion:

Pasta with tomato and peas is a simple but delicious dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With a few simple ingredients and a little bit of time, you can create a meal that is both satisfying and nutritious. So next time you're looking for a quick and easy weeknight dinner, give pasta with tomato and peas a try. You won't be disappointed!
