1 finely chopped onion
2 garlic cloves, chopped
20 g butter
750 g ground beef
3 teaspoons parsley
3 teaspoons flour
1 teaspoon Worcestershire sauce
3 teaspoons ketchup

Steps:

  • Saute onion and garlic in butter until the onion is soft.
  • Mix the onion/garlic/butter with the ground beef and other ingredients.

6 tournedos, 6 ounces each (fillet steaks, 1 1/2 inches thick)
6 tablespoons unsalted butter
2 shallots, minced
1 pound mushrooms, finely chopped
4 tablespoons heavy cream
Salt and freshly ground black pepper
2 pounds puff pastry
1 egg with 1 tablespoon of water, lightly beaten, for egg wash
Sauce Madeira, recipe follows
Watercress, for garnish
1 cup Madeira
2 tablespoons minced shallots
1 teaspoon minced thyme leaves
1 cup veal stock
2 tablespoons butter
Salt and pepper

Steps:

  • In a large skillet, over high heat, saute tournedos in 3 tablespoons butter for 30 seconds on each side. Set aside to cool completely.
  • In the same skillet, with the remaining 3 tablespoons of butter, cook shallots and mushrooms until all liquid evaporates. Add cream, salt and pepper. Reduce over moderate heat to a thick puree. Cool.
  • Preheat oven to 450 degrees F.
  • Divide pastry into 6 equal portions. On a lightly floured board, roll out each portion to a rectangle approximately 6 by 12 inches and 1/4 inch thick. Place each tournedo on one side of a pastry rectangle, leaving enough room to fold over.
  • Top each tournedos with mushroom puree. Brush edges of the pastry with egg wash and then fold it over and shape it to the contours of the meat. Cut away excess pastry and decorate as desired.
  • Glaze the tops of the pastry with egg wash.
  • Bake the tournedos 15 to 20 minutes, or until the pastry is golden brown.
  • Arrange each tournedo on a heated plate and garnish with watercress. Nap the sauce Madeira around the tournedos.
  • In a saucepan, bring Madeira, shallots, and thyme to a boil. Reduce to a simmer and cook until only 1/3 cup remains. Add the stock; continue to reduce, over medium heat, until slightly thickened. Whisk in the butter. Season, to taste, with salt and pepper.
  • Yield: Makes about 1 cup

Ingredients:
1 large onion, chopped
1 lb. lean ground beef
2 Tbls. olive oil
1/2 cu. water
salt and pepper
1 c. chopped nuts (optional)
1 stick unsweetened butter , melted
1/2 egg
1 c milk (or skim milk)
1 package frozen filo dough sheets (thawed overnight)

Steps:

  • Directions: Saute the onion in the oil until it changes color to dark yellow. Add the meat and brown it, then add the water, salt and pepper, and let it cook until the water is evaporated. If you decide to use nuts, add them at this time. Open the filo dough package and divide the sheets in half (they are usually sheets of 10X20" rectangles, you want to end up with two stacks of 10X10 sheets. In a greased 9X12X3" baking dish layer 2 to 3 sheets at a time and sprinkle them with a few drops of melted butter, and so on until you finish the first stack of sheets. Spread the meat and nut mixture on it and start doing the same thing with the second stack of filo sheets. Sprinkle,don't worry about spreading the butter on the sheets. When you finish with all the filo sheets, cut the feteer in 2X1" squares with a sharp knife. Mix together the left over melted butter, the egg and the milk and a pinch of salt (not much) and beat with a fork. At this point if you want, you can wrap the dish in plastic wrap and refrigerate until 1/2 hour before it is time to eat. Pour the egg mixture gently over the pastry and bake , uncovered in a preheated 375*F. oven for about 20 minutes or until the milk is absorbed and the pastry turns golden yellow.

1 pound ground beef
½ pound ground pork
1 large onion, chopped
1 green bell pepper, chopped
2 stalks celery, finely diced
3 cloves garlic, minced
1 small carrot, finely chopped
1 large baking potato, peeled and finely chopped
1 bay leaf
1 teaspoon dried thyme leaves
2 tablespoons chopped fresh parsley
1 teaspoon Worcestershire sauce
salt-free seasoning blend to taste
salt and pepper to taste
2 beef bouillon cubes
1 cup hot water
2 cups shredded mild Cheddar cheese
2 sheets frozen puff pastry, thawed
1 egg yolk
1 tablespoon water

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13-inch dish with cooking spray.
  • Heat a large nonstick skillet over medium-high heat and stir in the ground beef and ground pork. Cook and stir until the meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the onion, bell pepper, and celery. Cover and reduce the heat to medium; cook, stirring frequently, until the vegetables have softened and the onion is translucent, about 5 minutes.
  • Make a well in the center of the skillet and put the minced garlic directly on the bottom of the pan. Cook for 30 to 60 seconds or until fragrant, and then blend the garlic with the meat mixture.   • Dissolve the bouillon cubes in the hot water in a bowl, and pour it into the meat mixture; mix well. Bring to a boil, reduce the heat to low, cover, and simmer until the carrots are soft, 10 to 15 minutes.
  • Lay one sheet of puff pastry in the prepared baking dish. Gently press the pastry into the corners and up the sides of the dish. With a slotted spoon, transfer the meat into the crust and spread evenly. Avoid adding liquid to the pie. Top with Cheddar cheese.
  • Whisk together the egg yolk and 1 tablespoon water. Brush the edges of the bottom puff pastry sheet. Lay the second sheet of puff pastry over the baking dish, pressing with a fork to seal the edges. Brush the surface with egg wash and pierce with a fork several times to vent the crust.

1 pound ground beef
1 small onion, chopped
2 tablespoons curry powder, or to taste (I like more)
soy sauce or salt to taste
Pepperidge Farm pastry sheets (2 sheets to a box. 1 box makes 18 puffs).

Steps:
