4 soft sun-dried tomatoes, chopped
Handful fresh cilantro leaves
Handful fresh mint leaves
3 tablespoons red wine vinegar, eyeball it
Splash of water, 2 tablespoons
1/3 cup extra-virgin olive oil, eyeball it

  • Place lettuce on large platter and scatter veggies across the top. Put the garlic, almonds, sun dried tomatoes, cilantro, mint and vinegar in food processor and turn it on - if you have trouble getting the dressing going, add a splash (2 tablespoons) of water then stream in extra-virgin olive oil. 1 (16 ounce) package frozen baby peas
1 (8 ounce) can sliced water chestnuts
1/2 cup almonds, chopped
3 tablespoons mayonnaise
3 tablespoons sour cream
1 tablespoon butter
2 tablespoons sugar

Steps:

  • Rinse and thaw peas.
  • Rinse and cut water chestnuts into quarters.
  • Put both peas and chestnuts in medium size bow.l.
  • Melt butter in small saute' pan, add almonds and saute till light brown.
  • Remove from heat and let cool.
  • Once cool add almonds to peas and water chestnuts; add mayonnaise, sour cream and sugar.
  • You may want to add more sugar according to your own taste.

2 whole boneless chicken breasts with skin (about 1 1/2 pounds), halved
1 cup mayonnaise
1/3 cup minced shallots

24 very thin slices homemade-type white bread
1/2 cup finely chopped smoked almonds (about 2 ounces)

  • In a deep 12-inch skillet, bring the broth or water to a boil and add the chicken breasts in one layer. Reduce the heat and poach the chicken at a bare simmer, turning once, 7 minutes.
