3 tablespoons cornstarch
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
10 medium peaches, peeled and sliced (about 6 cups)

1 tablespoon lemon juice
TOPPING:
1 cup all-purpose flour
1/4 cup sugar
2 teaspoons grated orange zest
3/4 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
3 tablespoons cold butter
3/4 cup buttermilk
Vanilla ice cream, optional

Steps:

  • Preheat oven to 375°. In a large bowl, mix sugar, cornstarch, cinnamon and cardamom. Add peaches, berries and lemon juice; toss to combine. Transfer to a 10-in. cast-iron or other ovenproof skillet., In a small bowl, whisk the first 6 topping ingredients; cut in butter until mixture resembles coarse crumbs. 1/4 cup sherry or unsweetened apple juice

1 tablespoon lemon juice
TOPPING:
1 cup all-purpose flour
1/3 cup sugar
1-1/2 teaspoons baking powder

1/2 cup heavy cream, plus more for brushing
Coarse sugar, for sprinkling
3 pounds peaches (about 9 medium), pitted and sliced 1/4 inch thick
2/3 cup granulated sugar
1/4 cup cornstarch
Grated zest and juice of 1/2 orange
1 teaspoon pure vanilla extract
1 6-ounce container raspberries
1 6-ounce container blueberries
