3 Tbsp white cake mix ((I used Betty Crocker))
1 - 2 pinches of cinnamon ((can also add a small pinch nutmeg too))
2 1/2 Tbsp milk
1 (4 oz) pkg. diced peaches in light syrup

Steps:

  • Place butter in a mug and melt in microwave.
  • Meanwhile, in a small bowl whisk together cake mix and cinnamon then whisk in milk and stir until well blended.
  • Pour mixture over melted butter in mug (don't stir). Drain off 2 Tbsp liquid from peaches (about 2/3 of the liquid), then pour peaches over top of cake mix (don't stir).
  • Microwave on 50% power for about 3 - 4 minutes, until desired doneness (time may vary depending on each microwave oven and wattage).
  • Allow to cool slightly (it will be ridiculously hot) then optionally top with vanilla ice cream and a light dusting of cinnamon.

1 tablespoon nonfat dry milk powder
⅛ teaspoon baking powder
⅛ teaspoon ground cinnamon
1 pinch salt

1 (4 ounce) container diced peaches, well drained

Steps:

  • Place butter into a microwave-safe cup and heat on high in microwave until melted, about 20 seconds.
  • Combine sugar, flour, milk powder, baking powder, cinnamon, and salt in a small bowl; add water and stir. Transfer sugar mixture to the mug and stir with a fork until batter is well mixed. Add peaches to top of batter.

2 tablespoons granulated sugar
2 tablespoons flour
1 tablespoon instant nonfat dry milk powder
1/8 teaspoon baking powder
1/8 teaspoon cinnamon
1 dash salt
1 -4 ounce snack size container of diced peach

Steps:

  • Blend all of the dry ingredients ingredients and place in a plastic bag if using at a later date or giving as a gift.
  • Microwave 1 Tbsp butter or margarine in mug until melted (about 20 seconds on high power).
  • Add cobbler mix and 2 Tbsp water. Stir with a fork until well blended
  • Add well drained peaches on top of batter. Do not stir.
  • Microwave for 2 minutes on 70% power. Let stand in microwave 2 minutes. Remove from oven and let stand until cool enough to eat.
