FRESH PEACH TORTE

Fresh Peach Torte image

My all time favourite dessert that's foolproof and always loved. I've been making this for 25 years. I've made it often with strawberries, just use about 1 lb (1 litre); have also used rhubarb, blueberries, nectarines.... You can use light or regular sour cream. A guaranteed winner!

Time 2h30m

Yield 9 serving(s)

Number Of Ingredients 6

2 cups fresh peaches
2 cups mini marshmallows
2 cups graham cracker crumbs
1/2 cup butter
1/2 cup sugar
1 1/2 cups Cool Whip

Steps:

  • Set aside 1/2 cups of graham cracker crumbs. Add melted butter and sugar to the rest of the graham cracker crumbs and press into an 8-inch square baking pan.
  • Chop peaches.
  • Heat marshmallow until soft over double boiler and mix in peaches. Remove from heat and stir in cool whip.
  • Pour into lined pan.
  • Top with the reserved 1/2 cups graham cracker crumbs.
  • Chill about 2 hours.

Tips:

  • Use ripe, juicy peaches: This will ensure that your torte has the best flavor.
  • Don't overwork the dough: Overworking the dough will make it tough. Just mix it until it comes together.
  • Chill the dough before baking: This will help to prevent the dough from spreading too much in the oven.
  • Bake the torte until the crust is golden brown and the filling is bubbling: Use a toothpick to check if the torte is done. It should come out clean when inserted into the center of the filling.
  • Let the torte cool before serving: This will allow the flavors to meld and the filling to set.
