Time 40m

Yield 12 Muffins

Number Of Ingredients 10

1/4 cup cream cheese
1/2 cup sugar
2 eggs
1/2 cup sour cream
1 cup apricot yoghurt
1 1/2 cups canned diced peaches
1 lemon, rind of
2 1/2 cups self raising flour
1/4 cup slivered almonds
1/4 cup caster sugar (extra)

Steps:

  • Blend sugar into cream cheese.
  • Beat in eggs, sour cream and flour.
  • Mix in peaches and lemon rind.
  • Fold in flour. If mixture still runny add extra 1/2 cup flour.
  • Place mixture in muffin pans, sprinkle with almonds, then sugar.
  • Put in a pre-heate oven 180C for 25 minutes.

Tips:

  • Choosing Ripe Peaches: Select peaches that are fragrant, slightly soft to the touch, and have a deep orange-yellow color. Avoid peaches that are bruised or have green patches.
  • Preparing Peaches: To peel peaches easily, score an X on the bottom of each peach and immerse it in boiling water for 30 seconds to 1 minute. Then, transfer the peaches to an ice bath to stop the cooking process. The skins will slip off easily.
  • Measuring Flour: To ensure accurate measurements, use a kitchen scale to weigh the flour instead of using measuring cups. Alternatively, spoon the flour into the measuring cup and level it off with a knife.
  • Mixing the Batter: Do not overmix the batter, as this can result in tough muffins. Mix the wet and dry ingredients separately, then combine them just until the dry ingredients are moistened. Overmixing develops the gluten in the flour, making the muffins dense.
  • Baking the Muffins: Preheat the oven to the specified temperature before placing the muffin batter in the oven. This helps the muffins rise properly. Additionally, rotate the muffin pan halfway through baking to ensure even cooking.
  • Testing for Doneness: Insert a toothpick or skewer into the center of a muffin. If it comes out clean or with just a few moist crumbs attached, the muffins are done. Avoid overbaking, as this can dry out the muffins.

Conclusion:

Peaches and Cream Muffins are a delightful treat that combines the flavors of sweet peaches and creamy vanilla. These muffins are relatively easy to make and can be enjoyed for breakfast, brunch, or as an afternoon snack.
