1 cup all-purpose flour
2 TBS sugar
¼ tsp salt
⅛ tsp baking powder
¼ cup butter, softened
1 ½ cup fresh sliced peaches, peeled
¼ cup plus 2 TBS sugar
1 tsp cinnamon
2 egg yolks
1 cup whipping cream

Steps:

  • Preheat oven to 400°.
  • Stir together, 2 TBS sugar, the salt and baking powder.
  • Work in the butter until mixture is crumbly.
  • Pat mixture firmly and evenly in bottom and halfway up sides of an ungreased square pan, 8x8x2 inches.
  • Arrange peach slices in pan.
  • Mix ¼ cup plus 2 TBS sugar and the cinnamon; sprinkle over peach slices.
  • Bake 15 minutes.
  • Blend egg yolks and whipping cream; pour over peaches.
  • Bake until custard is set and edges are light brown, 25-30 minutes.

2 pounds ripe peaches
1 tablespoon lemon juice
3/4 cup sugar
1 cup milk and 3 cups heavy cream
1 tablespoon pure vanilla extract
4 large egg yolks

Steps:

  • 1. Peel, pit and slice peaches, reserving peels and pits. Combine the peach slices, lemon juice and 1/4 cup sugar, then set aside.
  • 2. In a saucepan, combine the milk, cream, remaining sugar, vanilla and peach peels and pits; cook, stirring, over medium heat for 10 minutes. Do not boil. Remove from heat.
  • 3. Place yolks in a bowl and, whisking constantly, pour in 1 cup of the hot-milk mixture; continue whisking until smooth.
  • 4. Slowly pour the egg mixture back into the hot-milk mixture in the saucepan, whisking constantly until smooth. Place the saucepan over medium heat and stir the mixture constantly until it is thick enough to coat the back of a spoon (6 to 8 minutes). The mixture should never boil.
  • 5. Cool to room temperature and then strain into a bowl.
  • 6. Puree the reserved peaches in a food processor until smooth. Stir into the milk mixture and freeze in an ice cream maker according to the manufacturer's instructions.

1 large piece fresh gingerroot (about 3 inches), peeled and coarsely chopped
COCKTAIL:
1/4 cup orange liqueur
2 medium ripe peaches, peeled and halved
1 bottle (750 milliliters) white wine, chilled
Ice cubes
1 to 1-1/2 cups chilled ginger ale
Fresh mint leaves and peach slices, optional

Steps:

  • In a large saucepan, combine sugar, water and ginger; bring to a boil. Reduce heat; simmer 10 minutes. Cool completely. Pour syrup through a strainer into a covered container; discard ginger., Place liqueur and 1/4 cup ginger syrup in a blender. (Cover and refrigerate remaining syrup for another use.) 1 tablespoon extra-virgin olive oil
1/2 tablespoon honey

2 1/2 teaspoons cinnamon sugar
1 1/2 cups peaches, thinly sliced
1/2 cup kiwi, sliced
4 (8 ounce) containers tropical peach yogurt or 4 (8 ounce) containers peach yogurt, drained in cheesecloth for 1 hour
1/4 cup peach preserves

Steps:

  • Heat oven to 350°F Spray a 7x11-inch tart pan with butter-flavored cooking spray.
  • Cut 1-inch square notches in the corners of the dough. Press 5 sheets of the phyllo into the pan; fold edges over toward the center of the pan. Spray dough with cooking spray; sprinkle with 1 teaspoons cinnamon-sugar, repeat. Press phyllo against sides of tart pan to secure.

¾ cup all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
1 (3 ounce) package non-instant vanilla pudding mix
3 tablespoons butter, softened
1 egg
½ cup milk
1 (29 ounce) can sliced peaches, drained and syrup reserved
1 (8 ounce) package cream cheese, softened
½ cup white sugar
1 tablespoon white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease sides and bottom of a 10 inch deep-dish pie pan.
  • In a medium mixing bowl, mix together flour, salt, baking powder and pudding mix. Mix in butter, egg and milk. Beat for 2 minutes. Pour mixture into pie pan. Arrange the peach slices on top of the pudding mixture.

2 cups sugar, divided
1 cup flour
1 teaspoon baking powder
1/2 teaspoon cinnamon

1 cup milk

1/2 cup butter (1 stick)

Steps:

  • Preheat oven to 350°F.
  • Place peaches in bowl, add 1 cup sugar. Stir and set aside for 30 minutes.
