PEACHY TURKEY BURGER OVER GREENS WITH ENDIVE, BACON, AVOCADO, AND GORGONZOLA



Peachy Turkey Burger over Greens with Endive, Bacon, Avocado, and Gorgonzola image

A delicious bun-less grilled turkey burger infused with summer peaches, jalapeno, and onions and served over mixed greens with endive, bacon, avocado, gorgonzola, and some more peaches. I created this recipe for my blog, Celiac and Allergy Friendly Epicurean by Jackie Ourman, however, it is a fantastic meal for all and does not need to be made gluten free. You can just use regular soy and teriyaki sauces. Toss salad with mustard vinaigrette if you like.

1 tablespoon canola oil
½ red onion, chopped
½ jalapeno pepper, seeded and minced
2 cloves garlic, minced
1 pound ground turkey
1 tablespoon gluten-free teriyaki sauce (such as Kikkoman®)
1 tablespoon tamari (gluten-free soy sauce)
1 peach, halved, divided
salt and ground black pepper to taste
1 head endive, chopped
1 (5 ounce) bag spring mix lettuce
1 firm ripe avocado, cubed
¼ cup crumbled Gorgonzola cheese
4 bacon strips, cooked and chopped

Steps:

  • Heat canola oil in a skillet over medium heat; add onion, jalapeno, and garlic. Cook until onions are translucent, 10 to 12 minutes. Cool to room temperature, about 15 minutes.
  • Mix the onion mixture, ground turkey, teriyaki sauce, and soy sauce together in a bowl using a fork. Chop half the peach and mix gently into the bowl with the turkey mixture. Season with salt and pepper. Form into 4 patties.
  • Preheat grill for medium heat and lightly oil the grate.
  • Cook turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Combine endive and spring mix in a bowl. Top with avocado, Gorgonzola cheese, and bacon. Serve alongside turkey burgers.

1 1/2 pounds ground beef chuck, 80 percent lean
2 teaspoons salt
3/4 teaspoon freshly ground black pepper
2 beefsteak tomatoes (slightly under ripe is best)
1/2 teaspoon smoked paprika
1 tablespoon olive oil
6 ounces gorgonzola cheese, crumbled or cut into 1/2-inch cubes
Six 4-inch ciabatta rolls (square or round) or your favorite burger bun, halved horizontally
1 cup fresh arugula

Steps:

  • Combine the ground chuck, 1 1/2 teaspoons of the salt, and the pepper in a medium bowl and shape into six 1/2-inch-thick patties.
  • Slice the tomatoes into 1/3-inch-thick rounds and place on a baking sheet. Sprinkle with the paprika and the remaining 1/2 teaspoon salt. Rub with the olive oil.
  • Preheat a grill or grill pan to medium-high heat. Grill the burgers until cooked to the desired doneness, about 3 minutes per side for medium-rare. On a clean, well-oiled area of the grill, grill the tomatoes until just charred, about 2 minutes per side. Grill the ciabatta rolls, cut-side down, until lightly toasted, about 2 minutes.
  • Place the burgers on the bottom halves of the rolls. Top each with 1 to 2 tablespoons of the gorgonzola, a tomato slice and some arugula. Cover with the roll tops and serve.

3 pounds ground chuck
1 (2-ounce) bottle Cajun hot sauce, or to taste
2 cups hickory wood chips, soaked for 30 minutes
4 muffaletta buns, or other very large rolls, spilt
1 pound maple bacon, cooked until crisp
Gorgonzola Cheese Sauce, recipe follows
Barbeque Sauce, recipe follows
2 tablespoon all-purpose flour
2 tablespoons butter
1 cup heavy cream
1/2 cup chicken stock
1/4 cup white wine
1 cup crumbled Gorgonzola
1 cup apple cider vinegar
1 cup ketchup
2 tablespoons light brown sugar
1 tablespoon hot sauce
1 tablespoon yellow mustard
1 tablespoon molasses
1 teaspoon salt
1 teaspoon crushed red pepper flakes

Steps:

  • Mix ground chuck and Cajun hot sauce together in a large bowl. Form mixture into 4 burgers of equal size. Cover and refrigerate for 1 hour.
  • Preheat charcoal grill to medium-high heat. When coals are white hot, scatter soaked chips over. When chips have ashed over, grill burgers, turning once, to desired doneness.
  • Meanwhile, toast muffaletta buns on grill. Place finished burgers on buns, top with maple bacon and Gorgonzola Cheese Sauce. Spear burgers with skewers or long toothpicks and quarter each. Serve Barbecue Sauce on the side.
  • In small saucepan over medium-low heat, melt butter. Whisk in flour to make a roux. Cook until flour loses its raw smell, about 2 minutes.
  • Whisk in cream, stock and wine. Simmer over low heat until smooth and thickened, about 5 minutes. Whisk in cheese, bring just to a simmer, then serve immediately.
  • Combine all ingredients in a medium sauce pan, whisking until combined. Bring to a simmer and cook over low heat until slightly thickened, about 5 to 10 minutes.

Turkey Burgers
1 lb ground lean turkey
½ red onion, chopped
½ jalapeno, seeded and minced
2 garlic cloves, minced
½ peach, chopped
1 tbl soy sauce*
1 tbl teriyaki sauce*
1 tbl canola oil (or cook bacon for salad in a frying pan, remove and use reserved drippings)
salt and pepper to taste
Salad
5oz Earthbound Organic Half Spring Mix & Half Baby Spinach or any other lettuce mix
1 head endive, chopped
1 ripe avocado, cubed and sprinkled with salt
4 strips bacon, cooked and chopped into bits
½ peach, cut into thin slices
¼ cup crumbled gorgonzola
Mustard Vinaigrette, optional
*I use Kikkoman or San-J Gluten Free

Steps:

  • Turkey Burgers
  • Sauté onion, jalapeno and garlic over medium to low heat in canola oil (or reserved pan from bacon below) until onions are translucent (about 10-12 minutes), let cool to room temperature (about 15 minutes)
  • In a bowl, use fork to mix ground turkey with soy sauce, teriyaki sauce and onion mixture and then add in chopped peach. Mix it gently so as not to damage the peaches too much
  • Form patties and grill until cooked through
  • Salad
  • Mix rinsed lettuces with chopped endive
  • Top with avocado, bacon bits, gorgonzola and sliced peaches and serve alongside turkey burgers. You can toss it with a mustard vinaigrette, if you like.
