BEST BUCKEYES (PEANUT BUTTER AND CHOCOLATE CANDIES)

Best Buckeyes (Peanut Butter and Chocolate Candies) image

I make about 30 varieties of cookies and candies during the holidays and these are the most requested. They are fairly easy and delicious. I serve them on a tray in miniature muffin liners. I have tried many different buckeye recipes, but this one, given to me years ago, is the best one I have used. ADDED 12/17/06: Instead of chips and paraffin wax, this year I used chocolate bark coating and it worked really well. You will need about Five - 2 oz. blocks of bark.

Yield Makes about 36 candies

Number Of Ingredients 4

1 (2-pound) bag confectioners' sugar
3 cups creamy peanut butter
3/4 cup butter, softened
1 (7-ounce) tub dipping chocolate, melted according to package directions

Steps:

  • 1. Line a large tray or baking sheet with wax paper. In a large bowl, combine the confectioners' sugar, peanut butter, and butter, stirring until well blended. Shape into one-inch balls.
  • 2. With a toothpick, dip each ball into the dipping chocolate until almost covered, leaving some of the peanut butter mixture exposed on top. Place the balls on the tray and refrigerate until firm, about two hours.

Tips:

  • Use creamy peanut butter for a smooth filling. If you prefer a chunkier filling, you can use regular peanut butter.
  • Chill the peanut butter mixture for at least 30 minutes before forming the balls. This will help them to hold their shape better.
  • If the peanut butter mixture is too sticky to handle, add a little more powdered sugar.
  • To make the buckeyes extra special, you can dip them in melted chocolate or white chocolate.
  • Store the buckeyes in an airtight container in the refrigerator for up to 2 weeks.

Conclusion:

Peanut butter buckeyes are a delicious and easy-to-make treat that is perfect for any occasion. They are a great way to use up leftover peanut butter, and they can be customized to your liking. Whether you like them plain or dipped in chocolate, buckeyes are sure to be a hit with everyone who tries them.
