- Preheat oven to 375 degrees Fahrenheit.
- Trim fat from tenderloin.
- Sprinkle with fresh ground black pepper to taste.

- Preheat the grill. Soak the peanut shells in water for 45 minutes.
- Season the pork well with salt, pepper, and steak seasoning. Smoke the pork on the grill for 45 minutes.
- Preheat the oven to 400 degrees F.
- Transfer the pork to a roasting pan, drain the peanuts and add them to the pan. Roast the pork in the oven until it reaches 135 degrees F on an instant-read thermometer, about 20 to 30 minutes. Remove from the oven to a cutting board.
- Peanut Butter BBQ Sauce: Combine all the sauce ingredients in a large saucepot and bring it to a simmer over low heat. Let simmer for at least 1 hour. Taste and season with salt and pepper, if needed.
- Slice the pork and arrange it on a serving platter. Spoon the warm BBQ sauce over the top and serve with the Carrot and Pickled Onion Salad.

Let rest in fridge at least 1 1/2 hours or overnight is better. Soak 8 inch bamboo skewers in water one hour. This is messy, but string 4 pieces pork on each skewer with about 1/4 inch separating pork squares. Heat grill to HIGH and fold about a 3 inch strip of foil onto grill at the front to guard your exposed skewers. This should keep them from burning off. Grill kabobs 3 minutes on each side, check for doneness. If the meat is still a bit mushy, it should cook just a bit more. Let it stay on the grill another minute or two. With remaining marinade, add 1 tsp soy, and one more tsp sambal or to taste(optional). Heat up to 145 degress on side burner at low temp. This makes an excellent dipping sauce with a little added spice
