Categories     main-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 13

2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon coarse salt
1/4 teaspoon ground cinnamon
2 cups buttermilk
2 large eggs
2 medium bananas, cut into 1/2-inch slices
2 tablespoons canola oil
2 tablespoons salted butter
1/4 cup peanut butter
2 tablespoons maple syrup

Steps:

  • Whisk together the flour, sugar, baking powder, baking soda, salt and cinnamon in a large bowl. Add the buttermilk and eggs. Whisk together, gradually incorporating the flour mixture, just until combined. Add the banana slices and gently combine; the batter may be slightly lumpy. Let stand 10 minutes.
  • Place a griddle pan over medium heat. Add the canola oil and butter. Using a ladle, pour 1/2 cup batter for each pancake, roughly 2 inches apart. When small bubbles appear across the surface of the pancakes and the edges lift from the griddle, flip and continue cooking until the pancakes are golden brown on the second side, about 4 minutes per side. Continue with the remaining batter.
  • In a small dish using a rubber spatula, mix the peanut butter and maple syrup until combined. For each sandwich, spread some peanut butter mixture over a pancake, then top with another pancake.

CHOCOLATE PEANUT BUTTER SPREAD

Chocolate Peanut Butter Spread image

This recipe came from my good friend Randi. She makes it and gives it as Christmas gifts. We love it warmed up on vanilla ice cream, but you can put it on anything. It is delicious. The recipe is super simple, but the clean-up is a bit messy.

Provided by Debbie Fontana

Categories     Other Desserts

Time 25m

Number Of Ingredients 7

1 1/2 c peanut butter, creamy
1/2 c chocolate chips, melted
1/4 c margarine, softened
1/4 c powdered sugar
1 tsp vanilla extract
1 tsp instant coffee
1 tsp hot water

Steps:

  • 1. Mix first 5 ingredients until smooth. Dissolve coffee in hot water. Add coffee to chocolate/peanut butter mix. Stir thoroughly. If you would like it coffee free, just substitute another teaspoon of water or vanilla.
  • 2. Store in air-tight container. We use mason jars, but you could also use plastic containers with tight fitting lids.

Tips

  • Choose the right peanuts: For the best flavor, use fresh, unsalted peanuts. Avoid peanuts that are rancid or have a musty smell.
  • Roast the peanuts before blending: Roasting the peanuts brings out their natural oils and enhances their flavor. You can roast the peanuts in a preheated oven at 350°F for 10-15 minutes, or in a pan over medium heat for 5-7 minutes, stirring constantly.
  • Use a powerful blender or food processor: A powerful blender or food processor is essential for getting a smooth and creamy peanut butter. If you don't have a powerful blender or food processor, you can try making peanut butter in a mortar and pestle, but it will take longer and require more effort.
  • Add a little bit of oil: Adding a little bit of oil, such as coconut oil or peanut oil, can help to make the peanut butter smoother and creamier. You can also add other ingredients, such as honey, maple syrup, or cocoa powder, to taste.
  • Store the peanut butter in an airtight container: Peanut butter can be stored in an airtight container in the refrigerator for up to 2 months, or in the freezer for up to 6 months.

Conclusion

Making peanut butter at home is a great way to enjoy fresh, delicious peanut butter without any added sugar or preservatives. With a few simple ingredients and a little bit of time, you can make a variety of different peanut butter flavors to enjoy on toast, sandwiches, or as a dip for fruits and vegetables. So next time you're looking for a healthy and satisfying snack, try making your own peanut butter at home.
