1 package (10 ounces) miniature marshmallows
3 cups Rice Krispies
1/2 cup light corn syrup, divided
10 tablespoons butter, divided

1 cup semisweet chocolate chips
1/4 cup dry roasted peanuts, chopped

Steps:

  • Reserve 1/3 cup chopped pretzels. In a large microwave-safe bowl, microwave 6 tablespoons butter on high for 45-60 seconds or until melted. Stir in marshmallows; cook 1 to 1-1/2 minutes or until marshmallows are melted, stirring every 30 seconds. Stir in Rice Krispies and remaining chopped pretzels. 20 soft fresh dates (400g), pitted
1/3 cup (95g) smooth natural peanut butter
2 teaspoons vanilla extract
1 cup (30g) puffed brown rice
1/2 cup (70g) unsalted peanuts, roughly chopped
80g raw organic 70% dark chocolate

Steps:

  • Line a 10cm x 20cm loaf tin with non-stick baking paper.
  • Place the dates, peanut butter and vanilla in a food processor and process for 2-4 minutes or until the mixture comes together into a paste. Transfer to a large bowl, add the puffed rice and peanuts and mix to combine. Using the back of a spoon, press the mixture into the base of the tin (see note).
  • Place the chocolate in a heatproof bowl over a saucepan of simmering water (the bowl shouldn't touch the water) and stir until melted. Pour the chocolate over the slice and spread evenly. Refrigerate for 20-30 minutes or until set. Remove the slice from the tin and cut into bars using a hot knife. Refrigerate until ready to serve.

1 cup miniature semisweet chocolate chips

Steps:

  • Generously grease 13x9 baking pan or coat with nonstick spray.
  • In a large, heavy saucepan, thoroughly stir together the peanut butter, brown sugar, butter and corn syrup. Bring to a boil, over medium high heat and boil, stirring constantly for 1 minute. Remove from the heat.

I small pkg mini marshmallows
1 Tbsp butter
1/2 c peanut butter, crunchy
5-6 c captain crunch peanut butter cereal
1 tsp vanilla extract

2 stick plus 2 tablespoons unsalted butter
1 1/2 c superfine sugar
1 1/2 tsp good vanilla extract
2 extra large fresh eggs at room temp
1 Tbsp bland oil like crisco or wesson
2 c crunchy peanut butter
3 c plus 2 tablespoons all-purpose flour
1 tsp baking powder
1 1/2 tsp salt
1 1/2 c cherry jam
1/2 c salted peanuts, chopped

Steps:

  • 1. Preheat the oven to 350 degrees. Grease and dust a 9 x 13 baking pan with the 2 tablespoons of butter and 2 tablespoons flour. Shake out the excess flour.
  • 2. In a large bowl with an electric mixer, cream the butter and sugar on medium speed until light yellow, about 2 minutes, and nice and smooth.
  • 3. With a clean hand, rub the oil on the inside of a 2-cup measuring cup before measuring the peanut butter. It won't stick that way.
  • 4. With the mixer on low, add the vanilla, eggs, and peanut butter and mix until well combined.
  • 5. In a small bowl, sift together the flour, baking powder, and salt. With the mixer on low, slowly add the flour mixture to the peanut butter mixture. Mix just until combined.
  • 6. Spread two thirds of the dough in the prepared pan, using a knife to spread it evenly. Spread the jam evenly over the dough. Add the remaining dough by the tablespoonful and spread gently over the jam. The remaining batter will not completely cover the jam which is a good thing since the beautiful cherry jam will shine through. Sprinkle with the chopped peanuts.
  • 7. Bake for 45 minutes, until golden brown. Cool and cut into 20 bars.

Tips:

  • For a chewier bar, use more corn syrup and less sugar.
  • For a crunchier bar, use more peanuts and less corn syrup.
  • If you don't have a candy thermometer, you can test the syrup by dropping a small amount into a glass of cold water. If it forms a soft ball, it's ready.
