Unsalted butter, room temperature, for baking dish
3 ounces bittersweet chocolate, coarsely chopped
7 ounces brioche, cut into eight 1/2-inch slices, halved diagonally
1 1/2 pounds firm but ripe pears, such as Anjou or Bartlett (about 3), cored and very thinly sliced
3 large eggs, plus 3 large egg yolks
1 1/2 cups whole milk
1 1/4 cups heavy cream
1/2 cup packed light-brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon fine salt
1 tablespoon sanding or other coarse sugar

Steps:

  • Preheat oven to 325 degrees. Butter a shallow 2-quart baking dish and sprinkle bottom evenly with chocolate. Arrange brioche in dish, alternating each slice with 3 or 4 pear slices.

200g butter, plus extra for greasing
300g golden caster sugar
4 large eggs
75g plain flour
50g cocoa powder
410g can pear halves in juice, drained
100g plain dark chocolate (70% cocoa solids)
25g flaked almonds (optional)
cream or ice cream, to serve

Steps:

  • Heat oven to 190C/170C fan/gas 5. Lightly grease a roughly 20 x 30cm shallow ovenproof dish. Put the butter in a large saucepan and place over a low heat until just melted. Remove the butter from the heat and stir in the sugar until well combined.
  • Whisk the eggs together in a large bowl. Gradually add the eggs to the butter and sugar, beating well with a wooden spoon in between each addition. Sift the flour and cocoa powder on top of the egg mixture, then beat hard with a wooden spoon until thoroughly combined.
  • Pour into the prepared tin or dish and nestle the pears into the chocolate batter. Put the chocolate on a board and cut into chunky pieces roughly 1.5cm with a large knife. Scatter the chocolate pieces over the batter and sprinkle with almonds, if you like. Can be frozen at this stage.
  • Bake in the centre of the oven for 30 mins or until the mixture is crusty on the surface and lightly cooked inside. Do not allow to overcook, as the cake will become spongy rather than gooey in the centre. Serve warm with cream or ice cream

1 cup sugar
1 teaspoon pure vanilla extract
2 tablespoons cocoa powder
2 1/2 cups half-and-half cream
6 ounces semi-sweet chocolate chips
6 -8 thick slices brioche bread, crusts removed (or other good white bread such as challah)
1/4 cup butter (1/2 stick)
1 cup sugar
1/2 cup half-and-half cream
1 tablespoon Bourbon (optional)
1/2 vanilla bean, split and scraped (or 1 teaspoon pure vanilla extract)
1/2 cup butter (1 stick)

Steps:

  • Preheat the oven to 350F degrees .
  • Melt 1/2 stick butter in a 9 x 13-inch glass baking dish.
  • Cut brioche bread into 2-inch cubes, and press into the buttered dish.
  • In a medium bowl, stir together all other ingredients (except chocolate chips), stirring to combine well, and pour evenly over the cubed Brioche.
  • Sprinkle chocolate chips on top.
  • Bake the pudding for 45 minutes to 1 hour.
  • Warm Vanilla Sauce:.
  • Meanwhile, place all vanilla sauce ingredients in sauce pan.
  • Heat gently and stir often. Don't overcook, only about 5 minutes. Remove vanilla pod just before serving.
  • Scoop bread pudding into twelve individual serving dishes, drizzle 2 spoonfuls of warm vanilla sauce over top of each serving. Heaven!

¼ cup white sugar
1 ¼ cups all-purpose flour
1 teaspoon ground cinnamon

½ cup butter, softened

2 (1 pound) loaves sliced artisan bread, cut into 3/4 inch strips with crusts removed
4 pears - peeled, cored and sliced
2 cups heavy cream

  • Preheat the oven to 400 degrees F (200 degrees C).

  • Place the pudding onto a larger pan or cookie sheet with sides. Pour boiling water into the bottom pan until it is half way full.
  • Bake for 10 minutes in the preheated oven, then reduce the oven temperature to 350 degrees F (175 degrees C) and continue baking for 25 minutes. Pudding is done when a knife inserted into the center comes out clean.
