2 tablespoons butter
1 small onion, thinly sliced and separated into rings
1 cup button mushroom, thinly sliced
2 tablespoons flour
1/4 cup water or 1/4 cup chicken broth
1/2 cup milk
1 (10 -12 ounce) package frozen peas, cooked
1 dash ground nutmeg
1 dash ground black pepper
salt, to taste

Steps:

  • Melt butter over medium-low heat.
  • Add the mushrooms and onions and saute, stirring, until mushrooms are golden and onions are tender.

  • Add the chicken broth and milk.

1 12-ounce package extra-firm tofu, drained, cut into 3/4-inch cubes, patted dry with paper towels
1/4 cup water
1 teaspoon cornstarch
2 tablespoons vegetable oil, divided
6 ounces fresh shiitake mushrooms, stemmed, caps quartered
8 ounces sugar snap peas, trimmed
4 garlic cloves, minced
1 tablespoon minced peeled fresh ginger
4 green onions, sliced on diagonal

Steps:

  • Whisk first 5 ingredients in medium bowl to blend. Add tofu and stir to coat; let marinate 30 minutes. Drain, reserving marinade in small bowl. Whisk 1/4 cup water and cornstarch into marinade.
  • Heat 1 tablespoon vegetable oil in large nonstick skillet over medium-high heat. Add tofu and sauté until golden, about 2 minutes. Using slotted spoon, transfer tofu to plate. Add remaining 1 tablespoon vegetable oil to skillet. Add mushrooms and stir-fry until tender, about 3 minutes. Add sugar snap peas; stir-fry 2 minutes. Add garlic and ginger; stir-fry 30 seconds. Return tofu to skillet; drizzle reserved marinade mixture over. Stir-fry until marinade thickens slightly, about 30 seconds. Season to taste with salt and pepper. Transfer to bowl. Sprinkle with green onions and serve.

1 1/2 teaspoons lite olive oil or 1 1/2 teaspoons virgin olive oil
12 -16 white pearl onions
1/2 cup chicken broth, defatted or 1/2 cup vegetable broth
1 lb frozen peas
1 teaspoon butter
1/2 lb button mushroom, cleaned
salt and pepper

Steps:

  • Heat the oil and brown the onions slightly.
  • Pour in the broth, cook until the broth is reduced and the onions are still a bit crisp tender 4 minutes, remove and keep warm.
  • Melt the butter in the pan, brown the mushrooms until they start exuding liquid.
  • Return the onions to the pan.
  • Meanwhile steam the peas.

1 lb frozen sweet peas
8 mini sweet peppers, chopped
1 medium onion, chopped
8 oz fresh sliced mushrooms
1 Tbsp coconut oil (what i used) or canola or vegetable oil
1/2 tsp each granulated garlic & thyme
1 tsp steak seasoning or salt & pepper

Steps:

  • 1. Microwave peas or cook on stove top according to package directions.
  • 2. Heat coconut oil in large skillet over medium high heat.
  • 3. Add chopped onions, peppers & spices and stir to blend.
  • 4. Add sliced mushrooms & cook until vegetables are tender and transparent about 5-7 minutes or so. Add cooked peas to skillet stir to blend.
  • 5. Remove from heat add to serving bowl and serve while still hot. Add butter if desired. That adds extra calories, so I didn't add any.

STIR IN FLOUR UNTIL BLENDED AND COOK FOR ABOUT 2 MINUTES STIRRING GRADUALLY ADD CHICKEN BROTH AND MILK TO THE ROUX AND MUSHROOM MIXTURE. COOK UNTIL SAUCE IS THICKENED.
