1 lb roma tomato, chopped
1 tablespoon extra virgin olive oil
1/4 lb prosciutto, minced
1/2 teaspoon fresh ground black pepper
1 teaspoon dried oregano
12 ounces thin spaghetti, cooked and drained
1/4 cup Italian parsley, chopped
1/3 cup asiago cheese, grated

Steps:

  • Saute the garlic and tomatoes with the olive oil in a 10 inch skillet over medium-high heat until tender, about 5 minutes.

2 lbs pork necks
1 onion
3 tablespoons garlic
1 cup wine, of choice (substitute 1/2 cup of vodka for a spicy sauce)
extra virgin olive oil
1 (28 ounce) can tomatoes (of choice)
12 ounces tomato paste (2 small cans)
2 beef bouillon cubes
1 cup parmesan cheese
1 1/2 tablespoons basil
1 pinch sugar
noodles, of choice

  • sear neckbones on all sides using olive oil, then set aside.
  • saute in olive oil, onion, garlic and basil.
  • add the wine and scrape pot with cooking utensil.
  • add tomatoes, bouillon, neck bones, sugar.

  • with an hr left remove neckbones and add the paste.

1/2 pound hot Italian sausage, available in bulk at butcher counter or, 2 links, casings removed
1 pound sweet Italian sausage, available in bulk at butcher counter or, 4 links, casings removed
3 to 4 cloves garlic, chopped, optional
1/2 cup chicken or vegetable broth
1 (28-ounce) can crushed tomatoes
1/2 cup heavy cream
Salt and freshly ground black pepper
1 cup frozen green peas
24 leaves fresh basil, torn or thinly sliced
1 pound penne rigate pasta, cooked to al dente
Grated Italian cheese, for passing

  • Heat a large, deep skillet over medium high heat. Add extra-virgin olive oil, 1 turn of the pan. Add sausage meat. Crumble sausage meat as it browns. Add chopped garlic to the pan. When all of the crumbles have browned evenly, deglaze the pan drippings using chicken or vegetable broth. Stir in crushed tomatoes and bring the sauce up to a bubble, then reduce the heat to a simmer. Stir cream into your sauce, this will blush the color and cut the acidity of the tomatoes. 1 * 1 lb meatypork neck bones or 1 lb pork spareribs
1 * 1 lb veal stew meat or 2 veal shoulder chops
1 * 1 lb Italian sausage
4 * 4 garlic cloves
1/4 * 1/4 cup tomato paste
3 * 3 (28 ounce) cans peeled Italian tomatoes
2 * 2 cups water
6 * 6 leaves fresh basil, torn into small pieces
For the Meatballs
1 * 1 lb ground beef (or combination of beef or pork)
1/2 * 1/2 cup plain breadcrumbs
2 * 2 large eggs
1 * 1 teaspoon finely minced garlic
1/2 * 1/2 cup freshly grated romano cheese or 1/2 cup parmesan cheese
2 * 2 tablespoons finely chopped fresh flat-leaf parsley
1 * 1 teaspoon salt
* pepper
2 * 2 tablespoons olive oil

2 tablespoons olive oil
3 whole garlic cloves, peeled
2 pig's feet
1 pound pork neck bones
2 (6 ounce) cans tomato paste
1 ½ cups water
2 (28 ounce) cans tomato puree
1 tablespoon white sugar
1 teaspoon black pepper
¾ teaspoon baking soda
1 (16 ounce) loaf fresh Italian bread, torn into 2-inch pieces
1 cup water
6 eggs, beaten
1 pound ground pork
1 pound ground veal
1 pound ground beef
1 tablespoon olive oil
1 clove garlic, minced
2 tablespoons chopped fresh basil
salt and pepper to taste
6 hard-boiled eggs, peeled

Steps:

  • Heat 2 tablespoons of olive oil over medium heat in the bottom of a large saucepan, and fry the garlic cloves 5 to 8 minutes, until brown and fragrant. Remove the garlic cloves and set aside. Place the pig's feet and pork neck bones in the saucepan and fry, turning occasionally, until the meat and bones have browned, about 15 minutes.
  • Return the garlic cloves to the saucepan, and stir in the tomato paste and 1 1/2 cups of water. Bring to a boil, and pour in the tomato puree. Reduce heat to low, and simmer for about 3 hours, stirring from the bottom often to prevent burning, until the pig's feet are tender and the mixture begins to thicken.   • Soak the torn bread with 1 cup of water in a bowl. Squeeze excess water out of the bread, and place the bread in a large bowl with the 6 beaten eggs, ground pork, ground veal, and ground beef. Mix thoroughly and form into 24 meatballs about 2 1/2 inches in diameter.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat, stir in the minced garlic and chopped fresh basil, let them cook for about 1 minute, and then add the meatballs. Season with salt and pepper to taste, and fry them on all sides until brown, about 15 minutes, working in batches, if necessary.
  • Place the browned meatballs, along with the oil, garlic, and basil from the skillet into the sauce, stirring lightly to avoid breaking them. Add the whole hard-boiled eggs, and simmer for about 1 1/2 more hours, until the meatballs are cooked, the sauce is thick, and all the flavors have blended.
