Yield 6 servings

Number Of Ingredients 9

4 strips bacon
2 tablespoons candied pecans or walnuts, finely chopped
2 tablespoons dried cranberries, finely chopped
6 dried apricots, finely chopped
1 tablespoon fresh rosemary leaves, finely chopped
2 teaspoons red wine vinegar
Kosher salt and freshly ground black pepper
One 7- to 8-ounce round high-quality Brie, preferably from France
Sliced baguette, crackers and apple and/or pear slices, for serving

Steps:

  • Preheat the oven to 325 degrees F. Lay the bacon in a large skillet, then cook over medium heat until golden and crisp, 4 to 5 minutes per side. Drain the bacon on paper towels, let cool, then finely chop.
  • Combine the bacon, pecans, cranberries, apricots, rosemary, vinegar, pinch of salt and a few grinds of pepper in a small bowl.
  • Remove the Brie from its packaging. Cut off the top rind of the round of Brie, leaving a 1/4-inch border around the edges (use a sharp knife and go in from above at a slight angle). Discard the rind you have removed. Put the Brie in a small baking dish. Top with some of the cranberry-pecan-bacon crumble, and scatter the rest around the Brie. Cover the dish with foil, and bake until the cheese is warm and gooey, 30 to 35 minutes.
  • Serve with bread, crackers and apple and/or pear slices for dipping.

Pecan Sticky Buns with Bacon Caramel image

Provided by Trisha Yearwood

Time 1h35m

Yield 12 buns

Number Of Ingredients 9

1 pound bacon
1 1/2 cups packed light brown sugar
1/4 cup pure maple syrup
1/4 cup heavy cream
1/4 teaspoon kosher salt
4 tablespoons unsalted butter
One 17.25-ounce box puff pastry
1 tablespoon ground cinnamon
1 1/2 cups chopped pecans

Steps:

  • Preheat the oven to 400 degrees F. Place a 12-cup muffin tin on a baking sheet lined with parchment paper. Line 2 additional baking sheets with aluminum foil.
  • Lay the bacon slices on the baking sheets lined with foil. Bake until almost crispy, but not quite done, about 18 minutes. Remove the bacon to a paper towel-lined plate. Pour the bacon fat into a small pot. Once the bacon is cool, crumble into small pieces.
  • Place the pot over medium-low heat. Add 1 cup brown sugar and cook, whisking frequently, until the sugar is dissolved, about 3 minutes. (The mixture will look granular.) Slowly stream in the maple syrup and whisk vigorously as the mixture begins to bubble. Once syrup comes together, add the cream and kosher salt. Remove from the heat and whisk until all of the cream is incorporated. Reserve until ready to use.
  • Melt the butter in a small saucepan over medium-low heat. Unfold both sheets of puff pastry and arrange the sheets so that the fold lines run parallel to the counter edge. Generously brush the sheets with the melted butter. Combine the remaining 1/2 cup brown sugar with the cinnamon in a small bowl. Sprinkle the sugar mixture evenly over the buttered sheets. Sprinkle 1/2 cup crumbled bacon and some of the chopped pecans over the pastry. Gentle press the bacon and nuts into the sugar mixture with your palms. Roll the pastry away from you, forming 2 tight logs. Use a serrated knife to cut each log into 6 equal pieces.
  • Pour 1 tablespoon of the bacon caramel into each muffin cup. Sprinkle with 1 tablespoon each crumbled bacon and chopped pecans. Place sticky buns cut-side into caramel in each muffin cup and gently press down, maintaining the round shape.
  • Bake until the caramel bubbles and the buns are deeply golden brown, about 35 minutes. Work quickly to release the sides of the buns from the muffin cups, using a small knife. Carefully invert the muffin tin onto another baking sheet. Spoon any caramel that remains in the muffin tin over the buns. Serve immediately.

MAPLE-PECAN BACON

Maple-Pecan Bacon image

Always looking for recipes for using the abundance of pecans in our yard.

Provided by Marsha Gardner

Categories     Meat Breakfast

Time 30m

Number Of Ingredients 3

12 slice thick cut bacon
1/3 c maple syrup, plus extra for drizzling
1 c pecans, finely chopped

Steps:

  • 1. Line a rimmed-baking sheet with foil and place a wire rack inside. Dredge the bacon in the maple syrup and lay out on the wire rack.
  • 2. Press finely chopped pecans into surface. Bake at 400-degrees for 25-30 minutes. Drizzle a small amount of additional maple syrup over the top and let cool for 5 minutes.

Tips:

  • Choose high-quality ingredients: Use the best quality bacon and pecans you can find. Fresh, flavorful ingredients will make a big difference in the final dish.
  • Cook the bacon properly: Don't overcook the bacon. It should be cooked until it's crisp but not burnt. This will help to prevent the bacon from becoming tough and chewy.
  • Use a variety of nuts: In addition to pecans, you can also use other nuts in this recipe, such as walnuts, almonds, or pistachios. This will add a different flavor and texture to the dish.
  • Don't overcook the pasta: The pasta should be cooked al dente, or slightly firm to the bite. This will help to prevent the pasta from becoming mushy.
  • Use a light hand with the dressing: The dressing should be flavorful but not overpowering. You can always add more dressing if needed, but it's difficult to remove it once it's been added.

Conclusion:

Pecan bacon is an incredibly versatile ingredient that can be used in a variety of dishes. It can be used to add a smoky, salty flavor to salads, soups, and pasta dishes. It can also be used as a topping for pizza, sandwiches, and burgers. No matter how you use it, this flavorful ingredient is sure to please everyone at the table.
