2 teaspoons cornstarch
1/2 lemon, juice of
1 cup coarse dry breadcrumbs
1 tablespoon fresh parsley
1 teaspoon kosher salt
1/4 teaspoon ground black pepper

3/4 cup finely chopped pecans
1/2 teaspoon dried oregano

1/2 teaspoon paprika

Turn carefully with a spatula and transfer the skillet to the oven to finish cooking. This should take about 8 more minutes. Don't overcook, you don't want it to dry out.

Tips:

  • Choose the right chicken. Boneless, skinless chicken breasts are the best choice for this recipe, as they are easy to cook and will hold up well in the waffle sandwich. If you prefer, you can also use boneless, skinless chicken thighs. Just be sure to adjust the cooking time accordingly.
  • Make sure the chicken is cooked through. To ensure that the chicken is cooked through, use a meat thermometer to check the internal temperature. The chicken should reach an internal temperature of 165 degrees Fahrenheit before you remove it from the heat.
  • Use a good quality waffle mix. The waffle mix that you use will make a big difference in the final product. Look for a mix that is made with high-quality ingredients and that has a good flavor. You can also use your favorite homemade waffle recipe.
  • Don't overmix the waffle batter. Overmixing the waffle batter will make the waffles tough. Be sure to mix the batter just until the ingredients are combined.
  • Cook the waffles according to the manufacturer's instructions. Each waffle maker is different, so be sure to follow the manufacturer's instructions for cooking the waffles. This will ensure that the waffles are cooked evenly and that they have a crispy exterior and a fluffy interior.
  • Assemble the waffle sandwiches while the waffles are still warm. This will help the cheese to melt and the flavors to meld together.

Pecan-crusted chicken waffle sandwiches are a delicious and easy-to-make meal that is perfect for breakfast, lunch, or dinner. With a crispy pecan crust, tender chicken, and gooey cheese, these sandwiches are sure to be a hit with everyone who tries them.
