GRAMMY'S OLD-FASHIONED PECAN DATE CAKE

Grammy's Old-Fashioned Pecan Date Cake image

Number Of Ingredients 14

1 1/2 cup sugar
2 eggs
2 tsp cinnamon
1 1/2 cup flour
1/2 cup butter, softened (or baking oil)
1 tsp baking soda
12 oz package pitted dates, quartered.
1 1/2 cups chopped pecans
1 cup buttermilk
1 1/2 cup sugar
1 tsp butter
1 1/2 cups chopped pecans
1 cup heavy cream
12 oz package pitted dates

Steps:

  • Preheat oven to 375 degrees. In a large bowl mix together the eggs, sugar, buttermilk and butter until combined. In a medium bowl, mix the dry ingredients together except for the dates. Once that is combined add the quartered dates (just cut each date into 4 pieces). Smash the dates around in the flower mixture until they are coated with flour and broken apart a little. Now, add the dry ingredients into the wet ingredients. Stir until just combined. Divide mixture into two GREASED (spray well with cooking spray) 9 inch round baking pans. Bake 25-30 minutes until mixture is cooked through and golden brown. Allow it to cool in the pan. Run a knife or spatula around edges and underneath to make sure it doesn't stick (this is a sticky cake). Put each one on a plate and let it sit in the refrigerator a few hours. Meanwhile, add all the ingredients for the icing into a large saucepan. Don't worry about chopping the dates, they melt. Heat on medium low until icing thickens up a bit and dates are almost all broken down. Mixture will be sticky and pretty thick. Do this about 20 minutes. Remove from heat. Let this sit in pan to cool. It will continue to thicken while it sits. Add icing to the middle of cake for the layers to stick. Ice the top and sides, then place in the fridge to firm up completely, Serve cold or at room temperature for cutting. Enjoy!

MOM'S CHRISTMAS FRUITCAKE COOKIES

Mom's Christmas Fruitcake Cookies image

A holiday tradition at our house for over 60 years, these cookies are full of candied fruit, pecans, and rum-soaked dates. It wouldn't be Christmas without them.

Provided by MartieHomemade

Categories     Fruit Cookies

Time 8h50m

Yield 72

Number Of Ingredients 14

1 pound dates
2 tablespoons dark rum
2 pounds red and green candied cherries
1 pound candied pineapple
6 cups pecans, roughly chopped
4 cups all-purpose flour, divided
3 teaspoons baking soda
3 tablespoons milk
¼ cup shortening (such as Crisco®)
1 cup white sugar
4 large eggs, at room temperature
1 tablespoon orange juice
1 teaspoon ground nutmeg
1 pinch kosher salt

Steps:

  • The day before: chop dates into small pieces and put in a glass bowl. Add rum. Cover with plastic wrap. Let sit for 8 hours, or overnight, to absorb the rum. You can leave this step out if you want but I find it makes the dates more delicious and the cookies have more flavor.
  • Preheat the oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
  • Dice candied cherries and pineapple into small pieces and place in a very large bowl; I use the top of my cake carrier. Add pecans, followed by dates. Add 1 cup flour. Toss well to coat all of the pieces and break them up so they are not sticking together.
  • Whisk baking soda into the milk and let it dissolve.
  • Mix shortening into the fruit. Add remaining flour, sugar, eggs, orange juice, nutmeg, salt, and milk-baking soda mixture. Mix together with your hands just until you no longer see the flour. Try not to overmix. The batter will be very dense.
  • Use a small ice cream scoop or two teaspoons to drop the cookies onto the prepared pans, about 1 inch apart.
  • Bake in the preheated oven until golden brown, 10 to 12 minutes. Cool on wire cooling racks.

Tips:

  • Use fresh, high-quality ingredients. This will ensure that your fruitcake has the best possible flavor and texture.
  • Soak the dried fruit in alcohol. This will help to plump up the fruit and add extra flavor.
  • Use a variety of nuts and dried fruit. This will give your fruitcake a complex and interesting flavor and texture.
  • Don't overmix the batter. Overmixing can make the fruitcake tough.
  • Bake the fruitcake at a low temperature for a long time. This will help to ensure that the fruitcake is evenly cooked and moist.
  • Let the fruitcake cool completely before frosting it. This will help to prevent the frosting from melting.
  • Store the fruitcake in a cool, dark place. This will help to keep the fruitcake fresh for longer.

Conclusion:

Pecan date fruitcake is a delicious and festive holiday treat. With its rich flavor and moist texture, it's sure to be a hit with everyone who tries it. So next time you're looking for a special dessert to make, give pecan date fruitcake a try. You won't be disappointed!
