Pinch of salt
1/2 cup brown sugar
1/2 teaspoon vanilla extract
3 tablespoons toasted, chopped pecans
1/3 cup semisweet chocolate chips (optional)

  • Preheat oven to 200 degrees. Line 2 baking sheets with parchment paper. Using an electric mixer on high speed, beat egg whites and salt until soft peaks form. Gradually add brown sugar and continue beating on high speed until stiff peaks form. Beat in vanilla. Fold in chopped pecans. Using a teaspoon, dollop the meringue into 11/2-inch rounds onto parchment paper-lined pans. Bake 1 hour. Turn oven off and allow meringues to cool completely in oven. Tips:

  • To make the perfect meringue, ensure your egg whites are at room temperature. This helps them whip up better and creates a more stable meringue.
  • Use superfine or caster sugar for the best results. It dissolves more easily and helps to create a smooth, glossy meringue.
  • Beat the egg whites and sugar together gradually, starting on a low speed and increasing it as the mixture thickens. This helps to incorporate air and create a light and fluffy meringue.
  • Add a pinch of salt to the egg whites before beating. This helps to stabilize the meringue and prevent it from becoming too soft.
  • Be patient! It takes time to beat the egg whites and sugar until they reach stiff peaks. Don't rush the process, or you'll end up with a flat, runny meringue.
  • Once the meringue is ready, use it immediately. The longer it sits, the more likely it is to deflate.
  • For a chewier meringue, fold in chopped nuts or chocolate chips before baking.
  • To make meringue kisses, spoon the meringue mixture onto a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until the meringues are crisp on the outside and chewy on the inside.
  • To make meringue pie, spread the meringue mixture over a pie filling. Bake for 15-20 minutes, or until the meringue is golden brown and the pie filling is bubbling.

Conclusion:

Meringue is a versatile and delicious dessert that can be enjoyed in many different ways. With a little patience and practice, you can master the art of making meringue and impress your friends and family with your culinary skills. So next time you're looking for a sweet treat, give meringue a try!
