1 pound onions, thickly sliced
2 pounds carrots, cut into 1/2-inch dice
2 bay leaves
3/4 cup white wine vinegar
1 (5-pound) cross-cut saddle venison, cut into 2-inch cubes
3 tablespoons flour
Salt
Pepper
Clarified butter
1/2 cup tomato puree
3/4 cup red wine
2 tablespoons plus 2 teaspoons red currant jelly
1 teaspoon arrowroot
1/2 lemon, juiced
1 lemon, thinly sliced
1/2 cup whipped cream
Parsley, finely chopped

Steps:

  • Combine onions, carrots, bay leaves and vinegar in saucepan. Boil and pour over meat. Let marinate overnight. Drain and dry meat and vegetables.
  • Mix meat and vegetables with flour and season with salt and pepper. Heat some clarified butter in large saucepan. When hot, add venison and brown, then add onions and carrots and brown. Add bay leaves.
  • Heat tomato puree in separate small saucepan until brown. Add puree to meat and vegetables. To this, add most of the red wine and 2 tablespoons red currant jelly. Reduce heat, cover and simmer 1 hour.
  • Transfer meat and vegetables to heated serving dish. Mix arrowroot with remaining red wine and add to boiling gravy to thicken. Add lemon juice. Nap meat and vegetables with gravy, garnish with lemon slices, cream and remaining jelly. Dust with parsley.

This hearty venison casserole has a consistency similar to a venison goulash. It may not win a contest for being the prettiest dish, but it's definitely a Blue Ribbon venison recipe. If you have a supply of venison, it's a delicious way to use it. The layers of potatoes and venison have just the right amount of seasoning and veggies. We loved the texture that thick cut mushrooms added. Creamed soup is the glue that holds the dish together. While it bakes, the soup runs to the bottom and mixes with all the other flavors. We'd recommend adding the French fried onions on top. Not only do they add flavor, they give the casserole a nice crunch.

1 medium onion, cut into slivers
3 - ribs of celery, chopped
1 tablespoon(s) garlic powder
1 teaspoon(s) celery salt
3 - 4 medium red potatoes (not white)
2 can(s) green beans, drained, 14.5 each
1 can(s) cream of mushroom soup, 10.5 oz.
1 can(s) cream of chicken soup, 10.5 oz.
1 can(s) French fried onions (optional)
6 - fresh mushrooms, sliced thick
- salt and pepper

Steps:

  • Brown ground burger, onions & celery together.
  • Add garlic powder & celery salt. Drain.
  • Grease or spray a deep casserole dish. Next, slice the potatoes about 1/4' thick. Add a layer of potatoes to the bottom of the dish. Salt & pepper them.
  • Next, spread 1/2 of the burger mixture on top of potatoes.
  • Now, add another layer of potatoes on top of that. Salt & pepper.
  • Put the remaining burger mixture on top of that.
  • Drain green beans really good. Place on top of the last layer.
  • Spread on sliced mushrooms next.
  • Mix soups together.
  • Spread on top of the last layer. Do not add any water to this, as it makes its own juice.
  • Run a fork down through casserole in about 4 different places, just so soups can seep down through it.
  • Cover with lid or aluminum foil. Bake at 350 degrees for about 45 minutes or until you can stick a sharp knife down through casserole and the potatoes are done.
  • Then add on the French fried onions and leave uncovered.
  • Bake another 15 minutes or until onions start to brown. Remove from oven and let stand, uncovered, for about 15 minutes before serving. **I serve this with homemade rye bread & it is a meal in itself.

500 g venison
2 large carrots
1 onion
2 celery ribs
150 g mushrooms
1 (400 g) can borlotti beans
2 tablespoons flour
25 g butter
1 tablespoon red currant jelly
1 beef stock cube
350 ml red wine
1 sprig fresh thyme
1 sprig fresh rosemary
1 bay leaf
salt and pepper

Steps:

  • Turn on the oven to 170c.
  • Melt half the butter in a large lidded casserole.
  • Fry the finely diced onion, celery and garlic until softened.
  • Add the mushrooms (halved or quartered), borlotti beans and carrots and fry for a further two minutes.
  • Add the flour and stir until the butter is absorbed by the flour and the contents of the pan are coated, cook for another two minutes.
  • Add the red wine, chopped herbs, bay leaf, redcurrant jelly and crumble in the stock cube, add salt and pepper to taste, stir well leave to simmer.
  • Melt the remaining butter in a small frying pan and brown the cubed venison, this should be done as briefly as possible so that the meat does not lose it's tenderness.
  • Add the meat to the casserole, put the lid on and place in the middle of the oven.
  • After half an hour turn the oven down to 130c and leave to cook for 2-3 hours, check periodically and add more water if needed.

1 tablespoon olive oil
1 yellow onion, chopped

½ cup milk
½ cup butter, melted
½ pound bacon, diced
