PELEPONNESIAN POT ROAST
This is a recipe that I clipped from an old Better Homes and Gardens issue. It was sent in by a reader, George Scangos. The original recipe called for reducing the sauce to 3 cups, but I never do. We serve this with pasta. You can slice the meat and spoon the sauce over both the meat and the pasta, or cut the meat up and mix it all together.

POLYNESIAN POT ROAST
This recipe was in an old cookbook that I have misplaced. Thankfully, my sister saved her handwritten copy and I am now able to save my recipe on here. We have prepared many meals with this recipe, and sometimes we even throw in some potatoes and carrots to make a scrumptious one pot meal. Hope you enjoy it as much as we all do. I have included the first hour of marinating at room temperature as prep time.

Steps:
- Rub the roast with the freshly ground pepper and the curry powder. Heat a large frying pan and add the oil. Brown the meat on all sides, using high heat.
- Prepare the sauce by simmering all the sauce ingredients until the onions are soft. Place the roast in a large piece of aluminium foil and place on a baking sheet. Pour the sauce over the roast and fold the foil over to seal the roast well. Place on a grill or in a 350 degree oven for about 2 hours.,or until tender. ( I prefer to put the roast in a dutch oven ,minus the foil, and pouring the sauce over the roast. This way you need to check the liquid, may need a little water.Using the dutch oven you can either place the Dutch Oven on top of the BBQ ,or on the stove top ,or in your regular oven as above.).
- You may wish to add a bit of salt when serving. I like with spratzle or wide egg noodles.

Tips:
- Use a Dutch oven or other heavy-bottomed pot with a tight-fitting lid. This will help to evenly distribute the heat and prevent the meat from drying out.
- Brown the meat in batches if necessary. Don't overcrowd the pot, or the meat will not brown properly.
- Use a good quality red wine. A dry red wine, such as a Cabernet Sauvignon or Merlot, will add flavor to the pot roast.
- Add plenty of vegetables to the pot roast. Vegetables such as carrots, celery, onions, and potatoes will add flavor and nutrients to the dish.
- Season the pot roast generously with salt and pepper. You can also add other spices, such as garlic powder, onion powder, or paprika.
- Cook the pot roast on low heat for at least 2 hours, or until the meat is fall-apart tender.
- Serve the pot roast with mashed potatoes, roasted vegetables, or a simple green salad.
Conclusion:
Peleponnesian pot roast is a hearty and flavorful dish that is perfect for a winter meal. The combination of tender beef, savory vegetables, and rich red wine makes this dish a surefire hit. With a little planning and effort, you can easily make this delicious dish at home.
