PENNE ALLA VODKA

Penne alla Vodka image

Provided by Ree Drummond : Food Network

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 12

1 pound penne
3 cloves garlic, minced
1 whole medium onion, chopped finely
3 tablespoons butter
2 tablespoons olive oil
1 cup vodka
One 14-ounce can tomato puree or tomato sauce
1 cup heavy cream
1 generous pinch red pepper flakes, plus more if needed
1/4 to 1/2 teaspoon salt
Freshly ground black pepper
Grated Parmesan, for serving

Steps:

  • Cook the pasta according to package directions.
  • Saute the garlic and onions in 2 tablespoons butter and the olive oil in a saucepan over medium heat until soft. Pour in the vodka, being careful if your stove has an open flame (remove the pan from the heat before adding). Cook and reduce for 2 to 3 minutes, then pour in the tomato puree. Stir the mixture until it's thoroughly combined, then reduce the heat to low. Pour in the heavy cream. Stir to combine, then turn heat to the lowest simmer possible. Sprinkle in the red pepper flakes and add salt and pepper to taste. Finally, stir in the remaining 1 tablespoon butter. Pour the drained pasta into the sauce and toss to combine. Sprinkle on the Parmesan, then sprinkle on more red pepper flakes if desired.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make all the difference in your penne alla vodka. Use ripe tomatoes, a good quality vodka, and freshly grated Parmesan cheese.
  • Don't overcrowd the pan: When cooking the pasta, make sure to use a large enough pan so that the pasta has plenty of room to cook evenly. If you overcrowd the pan, the pasta will cook unevenly and become mushy.
  • Cook the pasta al dente: Al dente means "to the tooth" in Italian, and it refers to the ideal texture for pasta. Pasta should be cooked until it is tender but still has a slight bite to it. To test if the pasta is al dente, remove a piece from the pot and bite into it. It should be tender but still have a slight resistance.
  • Use a good quality vodka: The vodka you use in your penne alla vodka will make a big difference in the flavor of the dish. Use a vodka that is smooth and has a neutral flavor. Avoid using a vodka that is too harsh or flavored, as this will overpower the other flavors in the dish.
  • Add the vodka at the right time: The vodka should be added to the pan after the tomatoes have been cooked down and the sauce has thickened. This will help to prevent the vodka from evaporating and losing its flavor.
  • Simmer the sauce: After you have added the vodka, let the sauce simmer for a few minutes. This will help to develop the flavors and create a rich, creamy sauce.
  • Serve immediately: Penne alla vodka is best served immediately after it is made. The pasta will start to absorb the sauce and become mushy if it sits for too long.

Conclusion:

Penne alla vodka is a classic Italian dish that is easy to make and always a hit with a crowd. With its creamy, flavorful sauce and tender pasta, it's sure to become a favorite in your home. So next time you're looking for a quick and easy weeknight meal, give penne alla vodka a try. You won't be disappointed!
