Categories     main-dish

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 10

8 ounces penne pasta
3 tablespoons olive oil
2 garlic cloves, minced
1 1/2 pounds thin asparagus, trimmed and cut into 1-inch pieces
Salt and freshly ground black pepper
2 cups (about 9 ounces) cherry tomatoes
1 cup shelled fresh peas
1/2 cup low-sodium chicken stock
1 cup grated Parmesan
2 tablespoons chopped fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta, reserving about 1/2 cup of the pasta water.
  • In a large saute pan, heat the oil over medium-high heat. Add the garlic and cook until fragrant, about 1 minute. Add the asparagus, season with the salt and pepper, and cook for 3 minutes until slightly soft. Add the cherry tomatoes and peas. Cook for 2 minutes. Pour the chicken stock into the pan and bring the mixture to a simmer. Cook until the tomatoes start to burst and the stock is reduced by half, about 3 minutes.
  • Transfer the asparagus mixture to a large serving bowl. Add the cooked pasta and 1/2 of the Parmesan. Toss well, adding reserved pasta water, if needed, to loosen the pasta. Garnish with the remaining Parmesan and chopped basil.

Penne Rigate With Prosciutto, and Snow Peas in a Truffled Cream image

This is a dish full of flavor. It happens to be one of my favorite pasta dishes. I chose the penne pasta so the ridges would grab the sauce, which is absolutely delectable... Made up of a truffled cream sauce then tossed with prosciutto, spring peas or fava beans and parmigiano cheese. You will love this dish...

She likes to tweak recipes she has read or seen on TV until she gets them to her liking, and then we write them down. This is one of them!

PENNE WITH ROASTED CHERRY TOMATOES

Penne With Roasted Cherry Tomatoes image

This exquisitely simple recipe came to The Times in a 2001 article about Paola di Mauro, an Italian winemaker in Marina, a small town southeast of Rome. She was one of a band of cooks who helped distinguish "cucina casalinga," roughly translated as "housewives' cooking." From her humble kitchen, Ms. di Mauro mentored some of the best Italian chefs and restaurateurs in the United States, including Mario Batali, Lidia Bastianich, Piero Selvaggio and Tony May. Her recipe is easy and calls for just five ingredients - cherry tomatoes, olive oil, pecorino romano and penne pasta - but get your hands on the best ingredients you can afford. Ms. di Mauro intended this to serve four as a first course, but if you're making this for dinner, double the recipe.

Time 35m

Yield 2 to 4 servings

Number Of Ingredients 7

1 pound small cherry tomatoes, halved
1/3 cup extra virgin olive oil, plus 2 to 3 tablespoons for tossing
Sea salt
Freshly ground black pepper
1/4 cup freshly grated pecorino romano, more for serving
1/4 cup bread crumbs
1/2 pound penne

Steps:

  • Preheat oven to 425 degrees. Line bottom of casserole dish with cherry tomatoes in a single layer, halved side up. Pour oil on top, season with salt and pepper. Sprinkle cheese and bread crumbs on top. Bake until tomatoes have wilted, about 20 minutes.
  • Meanwhile, bring a large pot of water to a boil. Season with enough sea salt so that water tastes mildly of salt. When tomatoes are just about done, add penne to water and cook until al dente (it should be pliable, but still firm in center). Scoop out about a cup of pasta water and reserve. Drain pasta and add to casserole. Fold tomatoes and pasta together, adding another 2 to 3 tablespoons olive oil, to coat. Taste and adjust seasoning. If it is dry, add a little reserved pasta water. Serve, passing more grated cheese at the table.

PENNE WITH PEAS AND PROSCIUTTO

Penne With Peas and Prosciutto image

Garden fresh peas make the difference in this pasta dish. If you can't get fresh, frozen will be a good replacement.

Provided by southern chef in lo

Categories     Penne

Time 25m

Yield 4-5 serving(s)

Number Of Ingredients 10

1 lb penne pasta
2 cups fresh peas
1 tablespoon butter
1/4 lb prosciutto, cut into small pieces
1/2 cup light cream
2 tablespoons of chopped fresh chives
1/2 cup of freshly grated parmesan cheese
1 cup cherry tomatoes, cut in half
1 teaspoon dried basil
salt & freshly ground black pepper

Steps:

  • Cook the penne according to the package directions add the peas during the last 3 or 4 minutes; drain and set aside.
  • in large skillet melt the butter and sauté the prosciutto until crisp,. Add the cream, chives, and parmesan cheese, along with the tomato and the basil, stirring well to blend.
  • Add the penne and the peas and mix well. Season to taste with salt and pepper.
  • Serve with more parmesan cheese.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the final dish. Look for ripe prosciutto, sweet peas, and juicy cherry tomatoes.
  • Don't overcrowd the pan: When cooking the pasta, make sure to use a large enough pot so that the pasta has plenty of room to cook. Otherwise, the pasta will stick together and become gummy.
  • Cook the pasta al dente: Al dente means "to the tooth" in Italian, and it refers to the perfect doneness of pasta. The pasta should be cooked through, but still have a slight bite to it.
  • Save some pasta water: Before draining the pasta, reserve about a cup of the pasta water. This can be used to loosen up the sauce if it becomes too thick.
  • Add the cream and cheese at the end: Stir in the cream and cheese just before serving. This will help prevent the cream from curdling and the cheese from becoming grainy.

Conclusion:

This penne rigate with prosciutto, peas, and cherry tomatoes in cream sauce is a quick and easy weeknight meal that's sure to please the whole family. With its creamy, flavorful sauce and tender pasta, this dish is a winner. So next time you're looking for a simple but delicious pasta dish, give this recipe a try.
