CHICKEN AND PENNE PARMESAN
Can also use broccoli in place of asparagus for those that don't like it. My 3 year old grandson gobbles this up. I had tried something similar in a restaurant that was to die for, so found something similar and changed it to my tastes.

Steps:
- Boil the penne, drain, rinse, and set aside. To prevent the noodles from sticking, spray with olive oil cooking spray.
- In a large, nonstick skillet over medium heat, add the butter and also spray with olive oil cooking spray. Add the garlic. Season the chicken with salt and pepper, add to pan, and saute until chicken is cooked through. Remove chicken from the pan and set aside, covering with foil. Add the vermouth and the juice and zest from 2 lemons. Scrape the bottom of the pan to loosen any browned bits and cook over medium-high heat to reduce a bit before adding the broth, flour, and milk and whisk constantly to incorporate the flour. Allow the sauce to thicken slightly and season with salt and pepper. Add the Parmesan and whisk constantly until the sauce thickens even more. Return the cooked chicken, along with any reserved juices, to the pan. Add the artichokes and stir gently until the artichokes and chicken are warmed through and the sauce is even thicker. Place the penne on a pretty platter and top with the chicken mixture. Garnish with fresh chopped parsley, black pepper, and lemon wedges for an easy and elegant presentation.

Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the final dish. Look for juicy chicken breasts, ripe lemons, and freshly grated Parmesan cheese.
- Don't overcook the chicken: Chicken is best when it is cooked through but still tender. Overcooked chicken will be dry and tough.
- Use a good quality olive oil: Olive oil adds a delicious flavor to the dish. Look for an extra virgin olive oil that is made with high-quality olives.
- Don't boil the lemons: Boiling the lemons will make them bitter. Instead, simmer them gently in the olive oil until they are softened.
- Use a generous amount of Parmesan cheese: Parmesan cheese adds a rich, nutty flavor to the dish. Don't be afraid to use a lot of it!
- Serve the dish immediately: Pasta is best when it is served immediately after it is cooked. This will prevent the pasta from getting soggy.
Conclusion:
This penne with chicken, lemon, and Parmesan is a quick and easy weeknight meal that is sure to please the whole family. The combination of juicy chicken, tangy lemons, and nutty Parmesan cheese is irresistible. Serve this dish with a side of roasted vegetables or a salad for a complete meal.
