2 large garlic cloves, minced
2 tablespoons flour
3/4 cup chicken or 3/4 cup beef broth
3/4 cup milk or 3/4 cup light cream
2 teaspoons dried parsley flakes
salt and pepper, to taste
1/3 cup parmesan cheese, grated (I use more)

  • Bring a large covered pot of water to a rapid boil. While the water heats, wash the spinach and transfer it to a separate large pot.
