Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

1 tablespoon olive oil
1 medium onion, chopped
4 Italian hot sausages, casings removed
1/4 teaspoon dried red pepper flakes
1/3 cup dry red wine
1 28-ounce can crushed tomatoes with added puree
2 teaspoons dried marjoram, crumbled
8 ounces penne pasta
Salt and freshly ground pepper
Freshly grated Parmesan or Romano cheese

Steps:

1 1/2 ounces dried porcini mushrooms
1 medium onion, chopped
1 clove garlic, minced
2 tablespoons extra-virgin olive oil
1 pound Italian sweet sausage sliced into 1-inch pieces
1 tablespoon tomato paste
2 cups chicken stock
1 teaspoon fresh rosemary, oregano or thyme leaves
Coarse salt and freshly ground pepper to taste
1 pound penne
Freshly grated Parmesan cheese

Steps:

  • Soak the mushrooms in one-and-a-half cups hot water for 30 minutes.
  • Meanwhile saute the onion and the garlic in the olive oil until soft. Add the sausage and brown lightly. Drain off any fat.
  • Drain the mushroom through a coffee filter or cheesecloth, reserving the soaking liquid. Quickly rinse the mushrooms under the running water.

1 lb Italian sausage
1 lb penne pasta
1 teaspoon olive oil
1 large onion, chopped
3 garlic cloves, minced
28 ounces tomatoes, undrained and coursely chopped
2 teaspoons dried basil

1/2 cup fresh parsley, chopped (I don't always use)

2 tablespoons parmesan cheese, freshly grated (optional)

Steps:

  • In skillet, cook sausage over medium heat until no longer pink in centre, about 15 to 20 minutes. (I boil first to get rid of some of the fat).
  • Drain well; cut into thin round slices.
  • In large pot of boiling water, cook pasta until tender but firm; drain and return to pot.

1 lb sweet Italian sausage, casings removed, then discarded
1 red bell pepper, cut into 1/2-inch pieces
3 garlic cloves, thinly sliced lengthwise
1/2 cup dry white wine
1 (28- to 32-oz) can whole tomatoes in juice
1/4 teaspoon black pepper
1 lb penne
1 oz finely grated Parmigiano-Reggiano (1/2 cup) plus additional for serving

Steps:

  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then add sausage meat and cook, stirring to break up large chunks, until meat is browned and just cooked through, 5 to 7 minutes. Transfer meat to a bowl using a slotted spoon and add bell pepper and garlic to fat in skillet. Reduce heat to moderate and cook, stirring occasionally, until pepper is just tender and garlic is golden, 5 to 6 minutes.
  • Add wine and sausage and simmer, scraping up brown bits on bottom of skillet with a wooden spoon, until liquid is reduced by half, about 2 minutes.
