I threw this dish of penne pasta, pancetta bacon, and mushrooms together one afternoon for lunch.

1 (12 ounce) package penne pasta
1 (3 ounce) package pancetta bacon, diced
2 tablespoons butter
1 (10 ounce) package sliced mushrooms
1 tablespoon minced garlic
½ cup heavy cream
¼ teaspoon Italian seasoning
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside. Meanwhile, cook pancetta in a large skillet over medium heat until browned but not crispy, about 5 minutes. Drain on a paper towel-lined plate and set aside.
  • Pour pancetta grease out of the skillet, and add butter. Increase heat to medium-high and stir in sliced mushrooms. Cook and stir until the mushrooms have softened and released their liquid. 1 1/2 cups low sodium beef broth
1 cup dry red wine
3 tablespoons olive oil, divided
12 ounces fresh mushrooms, assorted types (oyster, crimini, shiitake)
kosher salt
black pepper, freshly ground to taste
8 ounces pancetta, thinly sliced then coarsely chopped
6 tablespoons unsalted butter, cut into 1/2 inch cubes
3 tablespoons fresh sage, chopped
1 tablespoon fresh rosemary, chopped
1 lb penne rigate
1 cup parmesan cheese, finely grated, divided

Steps:

  • Bring the broth and wine to a boil in a medium heavy saucepan over medium-high heat and cook until reduced to 1 cup, 15 to 18 minutes.

3 tablespoons butter
1 medium shallot, minced
3 small garlic cloves, minced
1 (4 ounce) package brown mushrooms, stems removed and thickly sliced
½ tablespoon all-purpose flour
1 cup chicken stock
¼ teaspoon dried rosemary, or to taste
¼ teaspoon dried thyme, or to taste
salt and freshly ground black pepper to taste
½ cup heavy cream
¼ cup cream cheese, softened
1 tablespoon grated Parmesan cheese, optional
1 teaspoon Worcestershire sauce, or more to taste
1 teaspoon chopped fresh parsley
