Tips:
- Use fresh sage leaves for the best flavor. If you don't have fresh sage, you can use 1/2 teaspoon of dried sage.
- Use a variety of mushrooms for a more complex flavor. Some good options include cremini mushrooms, shiitake mushrooms, and oyster mushrooms.
- Use a good quality olive oil. Extra virgin olive oil is the best choice.
- Don't overcrowd the pan when cooking the mushrooms. If you overcrowd the pan, the mushrooms will steam instead of brown.
- Cook the mushrooms until they are browned and tender. This will take about 5-7 minutes.
- Add the white wine to the pan and cook until it has reduced by half. This will take about 2-3 minutes.
- Add the chicken broth, cream, and Parmesan cheese to the pan and stir until the sauce is smooth. Bring the sauce to a simmer and cook for 10 minutes.
- Cook the penne pasta according to the package directions.
- Drain the pasta and add it to the sauce. Stir until the pasta is coated in the sauce.
- Serve the pasta immediately, garnished with fresh sage leaves and Parmesan cheese.
