2 teaspoons olive oil
1 medium onion, chopped (1/2 cup)
4 cloves garlic, finely chopped
1 1/2 cups grape tomatoes or halved cherry tomatoes
2/3 cup finely chopped cooked ham
1/2 cup dry white wine or water
4 cups fresh spinach leaves
2 tablespoons finely shredded Parmesan cheese

Steps:

  • Cook and drain pasta as directed on package, omitting salt.
  • Meanwhile, in 10-inch nonstick skillet, heat oil over medium heat. Add onion and garlic; cook 3 to 4 minutes, stirring occasionally, until onion is tender. Stir in tomatoes, ham and wine. Cook and stir until some of the wine has evaporated.

3 garlic cloves
2 ounces goat cheese
1 ounce reduced fat cream cheese
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
6 ounces fresh baby spinach leaves
2 tablespoons freshly grated Parmesan

Steps:

  • Bring a large pot of salted water to boil. Add the penne and cook until it is tender but still firm to the bite, stirring occasionally, about 12 minutes.
  • Mince the garlic in a food processor. Add the goat cheese, cream cheese, 3/4 teaspoon of salt, 1/2 teaspoon of pepper, and half of the spinach leaves. Blend until the mixture is smooth and creamy. Set the cheese and spinach mixture aside.

8 ounces penne (I used Gluten Free Pasta, slightly undercooked)
1 (10 ounce) package frozen spinach, thawed and well drained
2 tablespoons butter
2 tablespoons sun-dried tomatoes, finely chopped
2 shallots, finely diced
2 tablespoons cornstarch
1/2 teaspoon salt
2 cups milk
7 ounces gouda cheese, shredded
1/4 cup parmesan cheese, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Cook pasta according to package directions. Drain and keep warm.
  • Melt butter in a large saucepan, over low heat being careful not to burn the butter.
  • Saute sun dried tomatoes and shallots in melted butter until shallots begin to soften, about 3 minutes.
