JAN'S PASTA-N-PEAS WITH TUNA AND SUN-DRIED TOMATOES

Jan's Pasta-N-Peas with Tuna and Sun-Dried Tomatoes image

This is a fresh and modern take on two recipes from my Italian mother-in-law. Fresh peas in place of canned, sun dried tomatoes in place of heavy tomato sauce and Bumble Bee® Solid White Albacore Tuna in Water replacing tuna in oil. This is a fast and flavorful meal to put together with just a few shelf stable ingredients.

Provided by Bumble Bee

Categories     Trusted Brands: Recipes and Tips     Bumble Bee Seafoods

Time 30m

Yield 8

Number Of Ingredients 12

1 (16 ounce) package linguine pasta, cooked and kept warm
2 (5 ounce) cans Bumble Bee® Solid White Albacore Tuna in Water, undrained
1 (6 ounce) package frozen peas
8 ounces fresh peas, rinsed
1 medium onion, diced
1 tablespoon minced garlic
½ cup julienne cut sun-dried tomatoes with herbs, drained, oil reserved
2 cups vegetable broth
Salt and black pepper to taste
1 pinch Crushed red pepper flakes to taste
1 tablespoon chopped fresh parsley
¼ cup grated Parmesan cheese for topping

Steps:

  • Place the oil from the sun dried tomatoes in a large saute pan over medium heat. Add in onions and garlic. Cook over medium heat until onions begin to turn translucent, about 4 minutes. Add the broth to the onions and bring to a simmer.
  • Stir in the peas and the sun dried tomatoes. Cook for another 3 minutes. Peas should remain crisp so be careful not to over cook.
  • Stir in undrained tuna and heat through. Be careful not to break up too many large pieces of the tuna while stirring. Cook about 2-3 minutes. Add salt and pepper to taste and crushed red pepper if desired.
  • Serve immediately over hot pasta. Garnish with parsley and top with grated Parmesan cheese.

PENNE WITH TUNA PUTTANESCA

Penne with Tuna Puttanesca image

This recipe for a delicious Italian simple supper is courtesy of actor Joe Pantoliano.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Number Of Ingredients 13

Coarse salt
1/4 cup plus 1 tablespoon olive oil, plus more for water
1 pound whole wheat penne
4 cloves garlic, finely chopped
1 can (2 ounces) anchovies, packed in oil, minced
1/2 cup capers, rinsed and drained
2 ribs celery, finely chopped
1/2 cup Kalamata olives, pitted
2 cans (13 3/4 ounces each) artichoke hearts, drained and quartered
2 jars (26 ounces each) tomato sauce
1 pound fresh albacore tuna, cut into 1-inch pieces
Crushed red pepper flakes
Freshly grated Pecorino-Romano cheese, for serving

Steps:

  • Bring a large pot of water to a boil over medium-high heat. Add salt and drizzle with oil; return to a boil. Add pasta, stirring, until water returns to a boil. Cook until al dente, according to package directions.
  • In a large skillet, heat 1/4 cup oil over medium-high heat. Add garlic and cook until lightly browned and fragrant, about 1 minute. Add anchovies and cook, stirring and mashing with the back of a spoon, about 1 minute. Add capers, celery, olives, and artichokes; cook, stirring, about 1 minute. Add tomato sauce and cook, stirring occasionally, until sauce has thickened, 5 to 10 minutes.
  • In a medium nonstick skillet, heat remaining tablespoon olive oil over medium-high heat. Add tuna and cook until browned on all sides. Transfer tuna to sauce and continue to cook until heated through, about 8 to 10 minutes. Season with red pepper flakes.
  • Drain pasta and add to sauce; stir to combine. Transfer to a large serving platter and serve immediately with freshly grated cheese.

Here are some tips and the conclusion

  • Use fresh or canned tuna in brine, not oil. Oil-packed tuna will make the finished product too oily.
  • If you are using fresh tuna, cook it before adding it to the recipe.
  • Use a good quality tomato suace.
  • Add some fresh herbs, such as basil or oregano, at the end of cooking.
  • Serve the penne with tuna over a bed of arugula or spinach.
  • Leftover penne with tuna can be stored in an air-tight container in the refrigerator for up to 3 days
  • This recipe is easily customizable to your liking. You can add more or less tuna, peas, or tomatoes as desired.
  • Use high-quality ingredients.
  • Follow the recipe carefully.
  • Make sure to cook the tuna until it is just done.
  • Add the peas and tomatoes at the end of cooking.
  • Garnish with fresh herbs and serve with a side of crusty bread.
  • Be patient.
  • Enjoy!
