1 teaspoon vegetable oil
18 fresh Scotch Bonnet peppers, sliced and seeded
6 fresh jalapeno peppers, sliced
6 cloves garlic, crushed
½ cup minced onion
¾ teaspoon salt
2 cups water
¼ cup distilled white vinegar
2 tablespoons white sugar

Steps:

  • In a large sauce pan over medium-high heat, combine oil, peppers, garlic, onion, and salt; cook for 5 minutes, stirring frequently.
  • Pour in water, and cook for 20 minutes, or until the ingredients are soft. Stir frequently. Remove from heat, and allow mixture to cool to room temperature.
  • Transfer the mixture to a blender, and puree until smooth. Pour in vinegar and sugar; blend until mixed. Keep refrigerated .

If hot sauce is your thing, you will love, love, love this fresh tasty recipe. I first tried a version of this hot sauce in Cameroon, Africa. I couldn't get enough of it; no matter where you ate, there would be a small bowl of this divine sauce on the table, each unique to the person making it. Only recently have I actively searched out the recipe. I did not follow the recipe to a tee, but combined this recipe with another a close friend gave me. In the end, I can't argue the results!

10 fresh hot chile peppers, stems removed
1 onion, coarsely chopped
¼ cup pitted fresh dates, or more to taste
¼ cup fresh basil leaves
¼ cup fresh parsley leaves
1 roma (plum) tomato, roughly chopped
2 tablespoons beef bouillon powder
4 garlic cloves
½ cup vegetable oil, or as needed
salt to taste
1 squeeze lemon juice

Steps:

  • Place peppers, onion, dates, basil, parsley, tomato, bouillon powder, and garlic in the bowl of a food processor; pour in the oil. Pulse mixture until finely chopped, adding more oil if needed to thin; season with salt.
  • Pour pepper mixture into a small saucepan; bring to a boil. Squeeze lemon juice into pepper mixture, reduce heat to low, and simmer for 15 minutes.
  • Allow pepper mixture to cool; pour into a glass jar with a lid. Store pepper sauce in the refrigerator.

A tremendous hot sauce that will spice up sandwiches, marinades, vegetable dishes -- just about anything! Jalapenos are boiled, then blended smooth with canola oil, salt and pepper.

1 ¼ pounds fresh jalapeno peppers
2 tablespoons canola oil
salt and pepper to taste

Steps:

  • Set aside 1 jalapeno pepper. Cut the stems off the rest; slice in half lengthwise, and remove the seeds.
  • Place all of the peppers in a large pot of boiling water. Boil peppers about 15 minutes. Reserve about 2 tablespoons of boiling water, and drain the rest.
  • Cut the stem off the remaining whole pepper, and place all of the the peppers into a blender. Pour in reserved water and canola oil, and season with salt and pepper. Blend until smooth and creamy. Serve hot or chilled.

1 cup water
1 cup white vinegar
9 dried pequin peppers, seeded
4 dried arbol peppers, seeded
6 cloves garlic, minced
2 tablespoons ground paprika
1 tablespoon onion flakes
1 teaspoon salt
2 tablespoons cold water
¼ teaspoon xanthan gum

Steps:

  • Combine 1 cup water, vinegar, pequin peppers, arbol peppers, garlic, paprika, onion flakes, and salt in a small saucepan over medium heat until the mixture reaches 180 degrees F (82 degrees C) and keep at that temperature for 10 minutes. Transfer to a blender and puree until smooth. Allow to cool to room temperature in the blender, about 15 minutes.
  • Combine 2 tablespoons cold water and xanthan gum in a small bowl. Add to blender with pepper mixture and puree for 30 seconds. Transfer mixture to a bottle and store in the refrigerator for up to 9 months.

12 fresh jalapeno peppers, seeded
1 onion, cut into chunks
1 (4 ounce) can chopped green chile peppers, drained
1 sprig fresh cilantro, chopped
garlic powder to taste
salt to taste

Steps:

  • In a food processor, combine diced tomatoes with chiles, jalapenos and onion; process until desired texture is achieved. Transfer to a bowl and stir in the can of green chiles, cilantro, garlic powder and salt.

1 slice white onion

24 hot peppers
1 large sweet potato, peeled, & sliced (or 4 carrots, peeled & sliced)
10 garlic cloves
1 large onion, sliced
1 lime, juice of
1 tablespoon balsamic vinegar
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon white pepper (black will do)
1 teaspoon sugar
1 teaspoon mustard powder
1 teaspoon turmeric
1/2 cup apple cider vinegar

Steps:

  • Blanch the peppers in boiling water for 1 minute (if you want this sauce milder remove seeds& membrane before blanching the peppers) Put the peppers in your food processor or blender.
  • Boil the onion, garlic& sweet potato until fork tender (just cover them with water& bring to a boil, simmer until tender) Toss the onion, garlic& sweet potato into the processor together with all the other ingredients Pulse to start and then puree, cool.
  • Place in a jar with a lid, refrigerate.
