1/4 cup chopped onion
1 garlic clove, minced
1/4 cup olive oil

1 teaspoon salt
1/3 to 1/2 cup shredded Parmesan cheese

1 pound thin green beans (haricots verts)
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 cup grated Parmigiano-Reggiano

Steps:

  • Preheat the oven to 400 degrees F.
  • Trim off the tough end of the beans and arrange the beans on a nonstick cookie sheet. Drizzle with olive oil season with salt and pepper, to taste. Sprinkle the cheese evenly over the top and bake until the cheese melts and forms a crisp shell over the beans, about 10 minutes. Let the beans sit a few minutes for the cheese to cool slightly. 1 tbsp olive oil
1 large onion , finely chopped
2 celery sticks , finely chopped
3 carrots , finely chopped
3 red peppers , sliced
2 garlic cloves , crushed
2 tbsp tomato purée
400g can cannellini beans , rinsed and drained
400g pinto beans , rinsed and drained
400g borlotti beans , rinsed and drained
2 x 400g cans chopped tomatoes
1 vegetable stock cube (check the label if you're vegan)
2 bay leaves
1 tbsp brown sugar
½ tbsp red wine vinegar

Steps:

  • Heat the oil in a large pan or casserole on a medium heat. Fry the onion, celery and carrots for 10 mins until soft and golden, then add the peppers and fry for another 5 mins.
  • Stir in the garlic for a minute, then add the tomato purée, all the beans and chopped tomatoes, then swirl out the tomato cans with a splash of water and add to the pan with the stock cube, bay leaves, sugar and vinegar. Season and simmer, uncovered, for 25 mins until the sauce reduces to coat the beans and the peppers are soft. Leave to cool before storing in transportable containers. 2 medium onions, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 tablespoon olive oil, plus more for browning sausage if needed
5 links hot Italian sausage (use turkey sausage for South Beach Diet*)
2 (15 1/2 ounce) cans cannellini beans, rinsed in cold water until no more foam appears (or use 3 cups cooked cannellini beans)
2 (14 1/2 ounce) cans petite dice tomatoes
1 teaspoon dried basil
1 teaspoon dried greek oregano
1 teaspoon ground fennel
ground pepper
2 -3 bay leaves
4 cups homemade chicken stock (or use 2 cans chicken broth and add a little water to make 4 cups)
freshly grated parmesan cheese, for serving

Steps:

  • Use a 3 1/2 quart slow cooker for this recipe.
  • Chop onions, red bell pepper, and green bell pepper into pieces about 1/2 inch square. Heat olive oil in a large frying pan, then saute onions and peppers until they begin to soften, then add to slow cooker.
