YELLOW SQUASH AND RED PEPPER SAUTE

Yellow Squash and Red Pepper Saute image

This is my favorite way to have yellow squash. I have to fight my husband for it because he loves it, too. I am estimating all the amounts. I usually just toss mine together with whatever amounts of squash and red pepper I have. I love the bright red and yellow colors dancing in the pan! Sometimes I sprinkle a little balsamic vinegar at the end and let it caramelize on the squash....not as beautiful a color but quite tasty.

Tips:

  • Pick the right squash: For this recipe, it's best to use a summer squash variety, such as zucchini or yellow squash. These squashes have a mild flavor and tender texture that will hold up well in the sauté.
  • Slice the squash thinly: This will help the squash cook evenly and quickly. Aim for slices that are about 1/4-inch thick.
  • Use a large skillet: This will give the squash plenty of room to cook without overcrowding. A 12-inch skillet is a good option.
  • Don't overcrowd the skillet: If you overcrowd the skillet, the squash will steam instead of sautéing. Cook the squash in batches if necessary.
  • Cook the squash until it's tender: The squash should be tender but still have a little bit of bite to it. This will take about 5-7 minutes per side.
  • Season the squash to taste: Once the squash is cooked, season it with salt, pepper, and any other desired seasonings. You can also add a squeeze of lemon juice or a drizzle of olive oil.

Conclusion:

Pepper squash sauté is a quick, easy, and delicious side dish that can be enjoyed for breakfast, lunch, or dinner.
