1 (10 ounce) can refrigerated buttermilk biscuit dough
10 tablespoons pizza sauce (such as Ragu® Homestyle)
10 slices pepperoni
10 tablespoons shredded mozzarella cheese, or as needed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Spray 10 muffin cups with cooking spray.
  • Press biscuits, one at a time, between hands to flatten. Place each flattened biscuit in a muffin cup; press into bottom and up sides of muffin cup. Set aside for biscuit to settle and slightly rise, about 5 minutes. Lightly press biscuits into cups as needed.

1 medium green bell pepper, seeded and finely chopped
1 (10 ounce) can mushroom stems and pieces, very well drainded (squeeze out any excess moisture with hands)
1 medium onion, finely chopped
1 1/4 cups monterey jack cheese, grated
1/2 cup pizza sauce (store-bought or homemade)
2 teaspoons garlic powder (or to taste, I use 2 tsps.)
1/2 teaspoon crushed red pepper flakes (to taste)
5 large eggs, slightly beaten
1/4 cup cooking oil
1 1/4 cups all-purpose flour
1 tablespoon baking powder

Steps:

  • Set oven to 350 degrees.
  • Prepare 12 muffin tins with paper liners.

3 tablespoons white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
2 tablespoons milk
2 cups mini pepperoni, separated
2 cups mozzarella cheese, shredded and separated

  • Preheat oven to 400º F. Don't use muffin tin liners, they will stick to the muffins. Grease the muffin tin instead.
  • Mix 1 1/2 cups flour, sugar, salt, basil, oregano, and baking powder. Add in vegetable oil, egg and 1/3 cup milk into flour mixture and stir until batter is smooth. It will be sticky. Add in another 2 tsbp milk. Fold/stir in cheese and pepperoni. Fill muffin cups about 2/3 full.
  • Bake for about 18 minutes until muffins turn out golden and knife inserted comes out clean. Right before eating, top muffins with the second cup of cheese and several slices of mini pepperoni and bake for another 4-5 minutes at 350º F until cheese is melted. Serve immediately.
