3 tablespoons olive oil, divided
2 medium onions, thinly sliced
3 bell peppers (1 orange, 1 red, 1 green), thinly sliced into strips
1 teaspoon sugar
1/2 teaspoon sweet paprika
1 pound fully cooked sausage, such as linguiça or kielbasa, cut in half lengthwise and crosswise into 6-inch-long pieces
1 cup dry red wine
2/3 cup Kalamata olives, pitted
1 baguette, halved lengthwise, cut crosswise into quarters

Steps:

  • Heat 2 tablespoons oil in large skillet over medium-high heat. Add onions and sauté until soft, about 5 minutes. Add peppers and sauté until lightly browned, about 6 minutes. Sprinkle mixture with sugar and paprika and sauté 1 minute. Using slotted spoon, transfer mixture to plate; leave drippings in skillet.

5 ounces sweet or hot Italian turkey sausages, about 2 sausages
1 tablespoon olive oil
2 pounds onions, peeled and thinly sliced
3 large cloves garlic, minced
3 large green peppers, washed, seeded and thinly sliced
Freshly ground black pepper to taste
1/4 teaspoon salt, optional
8 slices olive bread or tomato bread or 4 baguettes

Steps:

  • Remove skin from sausage meat and break into small chunks. Saute in nonstick pan until brown on all sides.
  • Add oil and when it is hot stir in the onions and garlic. Saute, stirring often, over medium heat, until they soften and brown.
  • Add peppers and cook 3 or 4 more minutes. Cover, reduce heat and cook until peppers are very soft, 5 minutes or so more. Season to taste. Either make sandwiches immediately or refrigerate mixture and reheat to warm before making sandwiches.

8 Italian spicy peppers
1 Spanish onion
1 small fennel bulb
2 tablespoons olive oil
Salt
3 pounds link sweet Italian turkey sausage
4 hoagie rolls, centers removed
4 ounces aged provolone
Hot Green Apple Chutney, recipe follows
1/2 onion, sliced thin
1/4 teaspoon minced garlic
1/2 teaspoon minced ginger
2 Granny Smith apples, cored and diced into 1/4-inch by 1/4-inch
1/2 teaspoon pickling spice
2 tablespoons apple cider
Salt and pepper

Steps:

  • Cut the stalks off the fennel and slice the bulb lengthwise into 1/2-inch slices. Cut the onion crosswise into 1/2-inch thick slices. Lightly brush both sides of fennel, onion, and peppers with olive oil. Grill the fennel, onion, and peppers over medium heat for 10 to12 minutes, turning once.
