CHICKEN PESTO PASTA BAKE
This recipe was born out of my need to use up some things from my freezer- chopped chicken meat and homemade basil pesto. It's easy, tasty, and can be made ahead. If you want to make a one dish meal out of this, toss in a 10 ounce bag of thawed frozen vegetables. I used homemade stock as well, but canned will work fine.

Tips:
- For the best flavor, use fresh basil pesto. If you don't have any on hand, you can make your own or use a store-bought variety.
- To ensure the chicken is cooked evenly, use boneless, skinless chicken breasts that are of similar size.
- If you don't have a baking dish, you can use a large skillet instead. Just be sure to adjust the cooking time accordingly.
- Serve the chicken with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.
- For a healthier version of this dish, use whole-wheat bread crumbs and low-fat cheese.
Conclusion:
This pesto chicken bake is an easy and delicious weeknight meal that the whole family will enjoy. With just a few simple ingredients, you can create a flavorful and satisfying dish that is perfect for any occasion.
