This is a super healthy salad, chicken, veggies and a yummy pesto dressing. It reminds me of pasta salad because of the dressing but I make it without pasta. You could definitely add it, I'd just increase the dressing slightly if you do. It came from a combination of different recipes. I love substituting greek yogurt for things like mayo, which was part of my idea here. All frozen veggies could be replaced with canned... sometimes I use asparagus instead of grean beans. Also, if you prefer less of a tangy dressing you can add a little splenda/stevia/sweetener of your preference and/or decrease the lemon.

1 lb cooked boneless skinless chicken breast, cut into 1/2-inch cubes
1/2 cup low-fat Greek yogurt
1 1/2 tablespoons basil pesto
2 teaspoons lemon juice
1 green onion, thinly sliced
1 cup cherry tomatoes, sliced in half
1 cup frozen green beans, thawed
1/2 cup frozen peas, thawed
1 1/2 cups artichoke hearts, drained and quartered (approx 1 16oz can)
1/4 teaspoon salt (optional)
1/8 teaspoon ground pepper (optional)

Steps:

  • Cut pre-cooked chicken into 1" cubes and set aside.
  • Prepare vegetables: Thinly slice green onion. Drain and quarter artichoke hearts. Chop cherry tomatos in half. Thaw peas and green beans, I recommend cutting the green beans into approx 1" lengths. Drain all the veggies as well as possible. Squeeze the extra moisture out with a paper towel if you like.
  • In a large bowl, mix together greek yogurt, pesto, lemon juice, salt and pepper.
  • Mix in all of the vetgetables and chicken. Toss to coat.
  • You can eat immediately but I think it tastes better after sitting in the fridge overnight. It's good on its own or served over lettuce or broccoli shreds.

12-16 ounces dried pasta (, cooked to package instructions)
2-3 cups cooked shredded cooked chicken
1 cup chopped fresh basil
1 1/2 cups pesto ((about 14oz./425g))
1/4 cup olive oil
1 cup sun-dried tomatoes (, packed in oil & chopped)
1 cup grated parmesan cheese
zest of 1 lemon
2 Tablespoons fresh lemon juice ((or more to taste))
salt (, to taste)
fresh cracked black pepper (, to taste)
toasted pine nuts (, optional)
extra grated parmesan cheese (, optional)
red pepper flakes ((optional, to taste))

Steps:

  • Cook the pasta to package instructions. Drain the pasta and immediately rinse with cold water. Drain the pasta, transfer to a large bowl and set aside. Allow the pasta to cool completely.
  • In a medium sized bowl toss together all the ingredients until evenly combined (pasta, chicken, basil, pesto, olive oil, sun dried tomatoes, parmesan cheese, lemon zest, lemon juice, salt, & pepper).
  • Add optional toppings (pine nuts, extra parmesan, red pepper flakes). Chill before serving.

2 cups cooked chicken breasts, diced (grilled is my favorite)
12 oz. farfalle pasta (bowtie), uncooked
1 cup pesto
¼ cup Italian dressing
2-3 cups baby spinach
10 oz. (about 2 cups) cherry tomatoes halved
8 oz. fresh mozzarella pearls (or fresh mozzarella cut into cubes)
¼ cup grated Parmesan cheese
salt and pepper to taste (kosher salt is preferred)
optional: pine nuts, basil, cut into small strips...

Steps:

  • 1. Cook the pasta in a large pot of salted water, until al dente, according to instructions on the package. Once cooked, drain and rinse with cold water. Shake out any excess water. 2. Place pasta in a large bowl and stir in the pesto and Italian dressing. Add the cooked chicken and add to the bowl along with the baby spinach. Fold in the tomatoes, mozzarella, and Parmesan cheese. Season to taste with salt and pepper. Add olive oil or more Italian dressing if the mixture seems dry. 3. Cover and refrigerate until ready to serve. Before serving give it a stir. 4. Keeps in the fridge for up to 5 days.

Super easy pasta salad- wonderful for any thing from a brunch to a summer dinner. Everyone likes it- even my picky 3 year old! My husbands co-worker brought this to share for an event and he begged for the recipe. The only particular is that the pasta salad will taste best if you use the pesto in a plastic container in the refrigerated section. The serving size stated is the pasta salad as main dish- in a pot luck or as a side it serves a lot more.

2/3 cup basil pesto
2 tablespoons white wine vinegar
salt
fresh ground pepper
3 tablespoons olive oil
3/4 lb orzo pasta
1 lb shredded cooked chicken
1/2 lb cherry tomatoes (cut in half) or 1/2 lb grape tomatoes (cut in half)

Steps:

  • In a large bowl whisk together pesto, vinegar and 1/4 T salt and pinch of pepper. Gradually whisk in oil until smooth.
  • Cook the orzo add 2T salt in cooking.
  • Drain and rinse under cold water and drain again.
  • Add orzo to vinigarete and toss.
  • Add chicken, and tomatoes and toss.
  • Tastes best chilled- though it's fine warm.

50g couscous
2 tbsp pesto
2 tbsp fat-free yogurt
2 cooked skinless chicken breasts , shredded, or 200g leftover roast chicken, shredded
½ small bunch of basil , leaves picked and torn, plus a few small leaves to serve
½ cucumber , chopped
2 sundried tomatoes in oil, drained and sliced
2 Little Gem lettuces , leaves separated
2 tsp toasted pine nuts

Steps:

  • Put the couscous in a large heatproof bowl and cover with 100ml boiling water. Stir in 1 tbsp pesto. Cover and leave for 8 mins.
  • Fluff the couscous with a fork, then stir in the rest of the pesto, the yogurt and some seasoning. Toss in the chicken, basil, cucumber and tomatoes.
  • Spoon the couscous mix into the lettuce leaves and eat with your fingers, or serve over the lettuce like a salad. Scatter over the pine nuts and more basil before serving.
