Steps:

  • In a large bowl, whisk together the sugar, salt, pepper, onion powder, mustard, garlic, basil, oregano, cilantro, hot pepper sauce, red wine vinegar, olive oil, lemon juice, and Parmesan cheese. Add the tomatoes, green onions and olives to the bowl, and stir to coat. Refrigerate.

1/2 cup pine nuts
1/2 cup grated Parmesan
1 teaspoon fresh lemon juice
2 cloves garlic

Olive oil, for drizzling

4 cups cooked rotini pasta, cooled
4 cooked chicken breasts (we used grilled), cooled and cut into cubes

Steps:

  • Preheat the oven to 350 degrees F.
  • For the cilantro pesto: Add the cilantro, pine nuts, Parmesan, lemon juice and garlic to a food processor and pulse until the ingredients are roughly chopped, 4 to 5 times. With the processor running, slowly drizzle in the oil through the lid opening. Process to desired consistency; you can make the sauce completely smooth or leave it fairly chunky.
  • For the roasted tomatoes: Line a baking sheet with parchment paper and add the tomatoes and shallot. Drizzle with olive oil and season with salt and pepper. Cook until the tomatoes start to break down and brown slightly, about 15 minutes. Let cool.

This is a super healthy salad, chicken, veggies and a yummy pesto dressing. It reminds me of pasta salad because of the dressing but I make it without pasta. You could definitely add it, I'd just increase the dressing slightly if you do. It came from a combination of different recipes. I love substituting greek yogurt for things like mayo, which was part of my idea here. All frozen veggies could be replaced with canned... sometimes I use asparagus instead of grean beans. Also, if you prefer less of a tangy dressing you can add a little splenda/stevia/sweetener of your preference and/or decrease the lemon.

16 ounce uncooked penne pasta
1 cup pesto sauce (recipe follows)
1 cup boconccini (small fresh mozzarella balls marinated in olive oil)
1 cup cherry tomatoes
1 cup fresh baby spinach

1 cup extra virgin olive oil
1/2 cup pine nuts
2 tablespoons Parmigiano-Reggiano, grated
3 gloves garlic, peeled

  • Prepare pasta according to package directions until al dente. Rinse in cold water and drain. Toss cooked pasta with prepared pesto sauce. Cool pasta mixture. I came up with this one day when trying to use up ingredients I already had. The pine nuts give the salad a great, nutty flavour and add a bit of crunch to the texture. Serves 4 as a side dish. Update: I have added some olive oil to the pasta salad to moisten it up a bit, based on a review.

2 cups dry pasta (penne, fusilli or bow-tie work best)
5 ounces fresh mozzarella cheese
10 cherry tomatoes
4 tablespoons pesto sauce
1 tablespoon olive oil
2 tablespoons very finely grated parmesan cheese
1/4 cup pine nuts

Steps:

  • Cook the pasta according to the directions on the package.
  • Meanwhile, cut the mozzarella into small cubes and quarter the cherry tomatoes.
  • When the pasta is cooked, drain it and rinse it in cold water until the pasta is cold. Drain it again.
  • Mix the pesto sauce, olive oil and parmesan in with the pasta.
  • In a large serving bowl, mix the pasta with the mozzarella and tomatoes.

1/3 cup prepared basil pesto (I use Classico)
1/2 cup mayonnaise
2 teaspoons fresh lemon juice

1 cup frozen baby peas

  • Bring large pot of water to boil, add pasta, and cook over high heat for 9 minutes. Then add frozen peas to the water in which the pasta's cooking, and cook an additional 4 minutes.

2 15oz cans of Garbanzo Beans with juice
4 or 5 cloves garlic (or more to taste)
1/4 cup lemon juice
1/4 cup fresh chopped parsley
1 tsp salt
1 tsp white pepper
1/3 cup Tahini
water as needed
1/2 cup chopped greek black olives
1 large tomato, seeded and diced
5 to 8 green onions, sliced thinly
1/2 a large red onion, diced small
1/4 cup Bertolli olive oil
1 pound package spaghetti or fettucine
1 tbs. Bertolli olive oil

Steps:

  • Break spacghetti into thirds and cook al dente. Run under cold water. Toss with a tablespoon of Bertolli olive oil to keep it from sticking. Put the first seven ingredients in a food processor or blender and blend until a paste about the same consistency as pesto is created, adding water a tablespoon at a time if needed. (Lean to the thin side, remember the hummus will get firmer when chilled.) Pour hummus over the pasta and toss until coated. Chill. Before serving, toss in the tomatoes, onions, and olives. Drizzle with the 1/4 cup of Bertolli olive oil. Serve and enjoy.
