3/4 cup butter, softened
1/2 cup sugar
1-1/2 cups all-purpose flour
1/2 teaspoon vanilla extract
FILLING:
2 packages (8 ounces each) cream cheese, softened
1/4 cup sugar
2 eggs
3/4 teaspoon vanilla extract
TOPPING:
3 cups thinly sliced peeled tart apples
1/2 cup sugar
1 teaspoon ground cinnamon

Steps:

  • Combine the first four ingredients. Press onto the bottom of an ungreased 9-in. springform pan. In a bowl, beat cream cheese and sugar. Add eggs and vanilla; mix well. Pour over the crust. Combine topping ingredients; spoon over filling. Bake at 350° for 55-65 minutes or until the center is set. Cool on a wire rack. Store in the refrigerator. Cut into wedges with a serrated knife.

My friend, Nancy, shared this recipe with me. For such an elegant presentation, it's very easy to make. In this version, you don't even need to mix the apples before putting them on the filling.

1/2 cup unsalted butter (1 Stick)
1/3 cup sugar
1 teaspoon pure vanilla extract
1 cup flour
8 ounces cream cheese (1 Package)
1/3 cup sugar
1 teaspoon pure vanilla extract
1/4 teaspoon almond extract
1 egg
2 -3 apples, any kind
2 tablespoons sugar
1/2 teaspoon cinnamon
1/4 teaspoon grated fresh nutmeg
1/2 cup toasted sliced almonds

Steps:

  • Preheat oven to 350 degrees.
  • Grease 9-inch pie pan with Crisco.
  • CRUST: Mix together Butter, 1/3 Cup Sugar, 1 Teaspoon Vanilla Extract, 1 Cup Flour. Press into pie pan evenly across bottom and up the sides.

  • TOPPING: 1/2 Cup Sliced Toasted Almonds.
  • Bake at 350 degrees for 1 hour.
  • Cool and refrigerate.
  • Hint #1: I purchase almonds already sliced, and simply toast them in a non-stick skillet at medium-high heat until fragrant and just starting to turn golden, just 2 or 3 minutes.
  • Hint #2; Have all ingredients at room temperature, and make the recipe in the order as written, saving the apple-peeling until just before you sprinkle on the almonds.
  • Hint #3: Use real vanilla extract, not vanilla flavor. It makes a big difference in the quality of flavor.

CRUST
110g unsalted butter
70g sugar
1tsp almond extract
130g plain flour
FILLING
5 cooking apples (peeled, cored and sliced)
70gr brown sugar
1tsp cinnamon
250g cream cheese
1tbsp flour
1 egg
50g sugar
1tsp vanilla extract
crushed almonds (optional)

Steps:

  • Preheat over to 230C. Make your crust by creaming together the butter, sugar and then flour and extract. Press this as evenly as possible onto the base of a springform tin and slightly up the sides.
  • Prepare your apples by microwaving the slices on a high heat for about 3-5 minutes until softer. Toss the slices with the sugar and cinnamon and set aside to cool slightly
  • Beat the cream cheese with the sugar. Then beat in the egg, vanilla and then the flour. Pour this mixture on the crust base.
  • Place the sliced apples as decoratively (or as messy) as desired over the top (some will sink in) and place in the oven for 10 minutes.
  • Reduce the heat to 190 and leave in for 25 minutes more. Sprinkle some crushed almonds on top and leave to cool before serving.
