PICKLE DIP FRIED BOLOGNA SANDWICHES

Pickle Dip Fried Bologna Sandwiches image

Provided by Molly Yeh

Categories     main-dish

Time 15m

Yield 1 sandwich

Number Of Ingredients 13

Unsalted butter
2 slices Texas toast
3 slices bologna
Pickle Dip, recipe follows
Handful of shredded iceberg lettuce
Handful of kettle chips
1 cup aged Havarti cheese, shredded
4 ounces cream cheese, softened
1/4 cup ranch dressing
2 tablespoons sriracha
1 tablespoon fresh chopped dill
1 tablespoon pickle brine (taste it and if it's very salty, reduce this amount)
2 whole kosher dill pickles, quartered and chopped

Steps:

  • Melt a nice layer of butter in a medium pan over medium heat. Toast the bread on each side until golden, smooshing it slightly so that it gets a good amount of butter. Transfer to a wire rack or tent them against each other to cool and get crisp. Add the bologna to the pan and cook on both sides until browned. Spread each slice of bread with a layer of Pickle Dip. Top one slice with lettuce and then the bologna and then the chips and then top with the other slice of bread.
  • Stir together the Havarti, cream cheese, ranch dressing, sriracha, dill, pickle brine, and pickles in a medium bowl. (If you'd like to serve this as a dip and not as a spread, thin it with another 1/4 to 1/2 cup of ranch dressing.)

SPICY PICKLE FRIES WITH HOMEMADE RANCH DIP

Spicy Pickle Fries with Homemade Ranch Dip image

Provided by Valerie Bertinelli

Categories     appetizer

Time 30m

Yield 4 servings

Number Of Ingredients 18

1/4 cup buttermilk
2 tablespoons mayonnaise
2 tablespoons sour cream
1 clove garlic, minced
1 teaspoon kosher salt
1 teaspoon white wine vinegar
1/4 teaspoon freshly ground black pepper
1/4 teaspoon onion powder
Dash hot sauce
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh dill
Twelve 3/4- to 1-inch-wide dill pickle spears
Vegetable oil, for deep-frying
3/4 cup all-purpose flour
1 tablespoon cayenne
1 teaspoon kosher salt
2 large eggs
1 1/2 cups panko breadcrumbs

Steps:

  • For the homemade ranch dip: Add the buttermilk, mayonnaise, sour cream, garlic, salt, vinegar, pepper, onion powder and hot sauce to a food processor. Pulse until well combined and smooth. Add the parsley and dill and pulse 4 to 5 times to incorporate. Pour into a serving bowl and set aside.
  • For the spicy pickle fries: Pat the pickle spears dry and refrigerate until well chilled. Heat 2 inches of oil in a large heavy pot to 350 degrees F on a deep-frying thermometer. Line a plate with paper towels.
  • Combine the flour, cayenne and salt in a wide shallow bowl. Beat the eggs in another shallow bowl. Put the panko in a third shallow bowl.
  • Working with a few spears at a time, dredge the pickles in the flour and shake off the excess. Roll them in the egg to coat, then let the excess drip off before coating them thoroughly in panko. Carefully add half the pickles to the oil and fry until golden brown, about 1 minute. With a slotted spoon, transfer the pickles to the lined plate to drain. Repeat with the remaining pickle spears. Serve hot with ranch dip.

1 tsp lemon juice
1 Tbsp taco seasoning mix (trust me here!)
parsley, dillweed or dill to garnish

  • 3. Serve with crackers or chips!

PICKLE WRAP DIP

This is always gone within an hour of making it! Its amazing! Perfect for a potluck or a picnic!

Provided by Jenny Gaffney

Categories     Other Appetizers

Time 20m

Number Of Ingredients 5

1 jar(s) dill pickle spears
1 pkg 16 oz sour cream
2 pkg cream cheese
1 small packe of deli sliced ham lunch meat
1 pinch dill weed

Steps:

  • 1. Soften cream cheese.
  • 2. Chop pickle spears into small pieces. Set aside in bowl.
  • 3. Slice deli ham into small pieces and add to pickles.
  • 4. Add in softened cream cheese, sour cream and dill weed. Mix well. I use a handheld mixer.
  • 5. Sometimes the pickles dont have as much bite as other times, if the dip doesnt taste "pickley" enough, just a little pickle juice!
  • 6. Serve with Triscuts.

Tips:

  • Choose the right cucumbers. Fresh, unwaxed pickling cucumbers are best. They should be firm and have a deep green color.
  • Slice the cucumbers thinly. This will help them absorb the pickling liquid more quickly.
  • Use a variety of spices and herbs. This will give your pickles a more complex flavor. Some popular options include garlic, dill, peppercorns, and mustard seeds.
  • Make sure the pickling liquid is completely covering the cucumbers. This will help to prevent spoilage.
  • Let the pickles ferment for at least 2 weeks. This will give them time to develop their full flavor.
  • Store the pickles in a cool, dark place. This will help them to keep their flavor and texture.

Conclusion:

Pickle dip is a delicious and versatile condiment that can be used in a variety of dishes. It is easy to make and can be tailored to your own personal taste. With a little planning and preparation, you can enjoy delicious pickle dip all year long.
