PIEROGI PASTA SHELLS

My family loves perogies, so I decided to create my own version. I took these to a Christmas party and they won rave reviews. When we left the party, I took home an empty pan-not a crumb to be found. -Kim Wallace, Dover, Ohio

STUFFED SHELL PIEROGIES

Stuffed Shell Pierogies image

This recipe was originally shared with me by a dear friend. So tasty as well as being an easy alternative to the traditional handmade Pierogies. While this is not difficult, it is a multi-step recipe. (1) cook pasta shells (2) potato preparation and cooking (3) potato mashing (4) onion slicing and cooking (5) stuffing pasta shells (6) layering onions and shells (7) baking. Cooking and preparation times are approximate.

For this tasty pierogi casserole, sauerkraut, onion, mushrooms, and pasta are combined and baked in a rich, buttery sauce. If you are making this ahead and are going to reheat it in the oven you may have to add a little water. If cold, bake at 350 degrees for 1 1/2 to 2 hours.

Tips:

  • For the best results, use fresh pierogi. Frozen pierogi can be used, but they should be thawed before cooking.
  • Be careful not to overcook the pierogi. They should be cooked until they are heated through, but not mushy.
  • If you are using a store-bought tomato sauce, be sure to season it to taste. You may want to add some salt, pepper, garlic powder, or Italian seasoning.
  • If you are making your own tomato sauce, be sure to use fresh tomatoes. Canned tomatoes can be used, but they will not have as much flavor.
  • Serve the pierogi pasta shells with a sprinkle of grated Parmesan cheese and a side of garlic bread.

Conclusion:

Pierogi pasta shells are a quick and easy meal that is perfect for a weeknight dinner. They are also a great way to use up leftover pierogi. With a few simple ingredients, you can create a delicious and satisfying meal that the whole family will enjoy.
