SKILLET PIEROGI WITH SAUSAGE AND BROCCOLI

Skillet Pierogi with Sausage and Broccoli image

Skipping the boiling water and cooking frozen pierogis in a hot skillet is an all-time favorite shortcut. Not only does it lessen the cooking time in this recipe, it gives the pierogi shell more time to get really crispy, which is a great contrast to the creamy filling.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

3 tablespoons extra-virgin olive oil
12 ounces sweet Italian sausage, casings removed
1 pound frozen or refrigerated pierogi, preferably potato and cheese
1 small onion, halved and sliced root to tip
1/2 teaspoon dried oregano
Kosher salt and freshly ground pepper
1 12-ounce bag broccoli florets, large florets halved or quartered
1 red, yellow or orange bell pepper, sliced
2 cloves garlic, finely chopped
1/4 cup grated Parmesan cheese

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the sausage and cook, breaking it up into small clumps with a spatula or wooden spoon, until browned and cooked through, about 8 minutes. Remove to a large plate, leaving the drippings in the pan. Add the pierogi to the pan and cook, turning, until browned and heated through, about 5 minutes. Remove to the plate with the sausage.
  • Add the onion, oregano and a big pinch each of salt and pepper to the skillet. Cook, stirring, until the onion is softened and just beginning to brown, about 3 minutes. Push to one side of the skillet; add 1 more tablespoon olive oil and the broccoli to the open side. Season the broccoli with salt and let cook, undisturbed, until it starts to brown in spots, 2 to 3 minutes. Stir the broccoli into the onion and cook until the broccoli is bright green with crisp-tender stems, 5 minutes.
  • Add the bell pepper to the skillet and cook until just softened, 2 to 3 minutes. Return the sausage and pierogi to the skillet and add the garlic and remaining 1 tablespoon olive oil. Cook, tossing, until well combined. Season with salt and pepper and stir in 2 tablespoons Parmesan.
  • Divide the pierogi and vegetables among plates or shallow bowls. Sprinkle with the remaining 2 tablespoons Parmesan.

Tips:

  • Choose the Right Potatoes: Use starchy potatoes like Russet or Yukon Gold for the perfect pierogi dough. They hold their shape well and provide a slightly chewy texture.
  • Boil the Potatoes Properly: Boil the potatoes until they are fork-tender but not mushy. Overcooked potatoes will make the dough too soft and difficult to work with.
  • Mash the Potatoes Smoothly: Use a potato ricer or a fine-mesh strainer to ensure the potatoes are smooth and free of lumps. Lumpy potatoes will make the dough tough.
  • Chill the Dough: After mixing the dough, chill it for at least 30 minutes. This will make it easier to roll out and prevent the dough from sticking to your hands.
  • Use a Generous Amount of Filling: Pierogi should be filled generously, but not so much that they burst open during cooking.
  • Seal the Pierogi Properly: Use a fork or pierogi press to seal the edges of the pierogi tightly. This will prevent the filling from leaking out during cooking.
  • Cook the Pierogi in Batches: Do not overcrowd the pot when cooking the pierogi. Cook them in batches to ensure they cook evenly.
  • Serve with Your Favorite Toppings: Pierogi can be served with a variety of toppings, such as butter, sour cream, fried onions, or bacon bits.

Pierogi with ham and broccoli is a delicious and satisfying dish that is perfect for any occasion. With its crispy exterior and flavorful filling, this dish is sure to become a family favorite.
