2 cups shredded aged sharp Cheddar cheese, at room temperature
½ cup jarred pimento peppers, drained and finely chopped
¼ cup chopped green onions
½ cup mayonnaise (such as Duke's®)
1 teaspoon freshly ground black pepper
½ teaspoon kosher salt
¼ teaspoon cayenne pepper
1 dash hot pepper sauce

Steps:

  • Combine Cheddar cheese, pimento peppers, and green onions in a medium bowl.
  • Combine mayonnaise, black pepper, salt, cayenne pepper, and hot sauce in another bowl.

10 ounces extra-sharp cheddar cheese, freshly grated
8 ounces cream cheese, softened well
1 (4 ounce) jar diced pimentos, with juice
3 garlic cloves, minced (approximate, adjust to your liking)
1/2 teaspoon Dijon mustard
1/4 teaspoon fresh ground pepper
1/4 teaspoon paprika
2 -4 drops hot sauce
1 pinch sugar

Steps:

  • Mix all ingredients very well. Note: For the best flavor, grate the cheddar just before you make the recipe. Store pimento cheese in an airtight container in the refrigerator.
  • To make this into a hot dip, simply heat in a crock pot until bubbly.

2 jars (4 ounces each) pimiento strips, chopped
1-1/2 teaspoons Worcestershire sauce
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
1 block (8 ounces) sharp cheddar cheese, shredded
1 block (8 ounces) extra-sharp cheddar cheese, shredded
