1 (18 ounce) box yellow cake mix
3 eggs
1/2 cup butter
1 cup shredded coconut
1 (20 ounce) can crushed pineapple with juice (use juice)
1 cup white chocolate chips

Steps:

  • Preheat oven to 350 degrees F.
  • Spray pan with baking pan spray. You must use baking pan spray or oil and flour to prevent sticking.
  • Mix all ingredients except chips. Mix chips.
  • Bake in bundt pan for 35 minutes or until toothpick comes out clean.
  • Let it cool. Then take it out of the pan. It gets stuck to the pan sometimes but it is very good anyway. Any suggestions would be great also.
  • Optional: Top with glaze or powdered sugar. It is very sweet so it is not really needed.

6 large eggs, room temperature
1 teaspoon coconut extract
3 cups all-purpose flour

1 can (8 ounces) crushed pineapple, undrained
FROSTING:
1 cup butter, softened
4 cups confectioners' sugar
2 teaspoons coconut extract
3 to 4 tablespoons water
FILLING:
1 jar (18 ounces) pineapple preserves
Dried pineapple slices and toasted sweetened shredded coconut, optional
