PINA COLADA CHICKEN
This is another Mr. Food recipe that is prepared on the grill. Mr. Food is often on in the morning during my local news while I am eating breakfast and if I see a recipe that sounds good I post it here to make at a later date. That's why I have so many Mr. Food recipes listed here.

COCONUT CHICKEN BITES WITH PINA COLADA SAUCE
This is an adaption of another recipe. I recently took it to a Pot luck, the chicken bites disappeared quickly and everyone wanted the recipe. The chicken can be left in larger pieces for a main course, just adjust the baking time to assure that your chicken is fully cooked. This is a pleasant change to the coconut shrimp....

Tips:
- Choose the right chicken: Use boneless, skinless chicken breasts or thighs for a tender and juicy result.
- Marinate the chicken: Marinating the chicken in the pineapple-coconut mixture not only adds flavor but also helps keep it moist during cooking.
- Use fresh pineapple: Fresh pineapple chunks add a tropical sweetness and tang to the dish.
- Don't overcook the chicken: Chicken can quickly become dry and tough if overcooked, so cook it just until it reaches an internal temperature of 165°F (74°C).
- Serve with a side of rice or vegetables: Pina colada chicken pairs well with rice, roasted vegetables, or a simple green salad.
Conclusion:
Pina colada chicken is a delicious and easy-to-make dish that is perfect for a summer cookout or a casual weeknight meal. The chicken is marinated in a flavorful pineapple-coconut mixture and then grilled or baked until tender and juicy. The result is a tropical-inspired dish that is sure to please everyone at the table.
