Reduce the mixer speed to low and beat in the flour until just combined.
  • Scoop tablespoon-size balls of dough and roll in the pine nuts to coat. Arrange 1 inch apart on the prepared pan. Press a thin wooden spoon handle or chopstick into each ball to make a deep indentation in the center.
  • Bake until the cookies are set around the edges but still soft in the center, 22 to 26 minutes. Re-indent the cookies with the back of a small measuring spoon while still warm. Fill with the cherry jam. Let the cookies cool completely on the pans.

Tips:

  • Use high-quality pine nuts: Fresh, plump pine nuts will give your thumbprints the best flavor. Avoid nuts that are brown or shriveled.
  • Toast the pine nuts before using: Toasting the pine nuts will bring out their flavor and make them more fragrant. You can toast them in a skillet over medium heat for a few minutes, or in the oven at 350 degrees Fahrenheit for 5-7 minutes.
  • Don't overmix the dough: Overmixing the dough will make the thumbprints tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough will help it to hold its shape better in the oven. Chill the dough for at least 30 minutes before baking.
  • Use a small cookie scoop to form the dough balls: This will help you to make uniform thumbprints. You can also use your hands, but be sure to wash them thoroughly first.
  • Make a deep indentation in the center of each dough ball: This will help the jam to stay in place when you bake the thumbprints.
  • Bake the thumbprints until they are just set: Overbaking will make them dry and crumbly. Bake the thumbprints for 10-12 minutes, or until the edges are golden brown and the centers are just set.

Conclusion:

Pine nut thumbprints are a delicious and easy-to-make cookie that is perfect for any occasion. They are made with a simple dough that is filled with a sweet and tart jam. The pine nuts add a nutty flavor and texture that makes these cookies irresistible. Whether you are making them for a holiday party or just for a snack, pine nut thumbprints are sure to be a hit.
