1/2 cup pecans, (chopped)

Steps:

  • In a large bowl, beat cream cheese, lime jello and pineapple juice until smooth.

16 ounce(s) crushed pineapple (drained and set aside)
1 sm package(s) lime jell-o
8 ounce(s) package cream cheese
1 1/2 cup(s) cold water
1 1/2 cup(s) mini marshmallows
1/2 cup(s) chopped pecans or walnuts
2 tablespoon(s) pineapple juice drained from pineapple

Steps:

  • Boil 1 cup water. .
  • In a large bowl add lime Jell-O. Pour in boiling water, stirring constantly to dissolve, about 2 minutes
  • Add 1/2 cup cold water and pineapple juice.
  • Blend in cream cheese. Chill until thickened, but not set, about 1 1/2 hours.
  • Fold in pineapple, marshmallows, and nuts.
  • Pour into 1 qt. mold (or a small cake pan) and chill until firm, about 2 hours. (Spray with unflavored Pam spray.)
  • Unmold by placing mold in warm water for 10 to 15 seconds. Invert mold onto serving platter.

3 tablespoons water

  • Drain pineapple, reserving juice; set the pineapple aside. In a saucepan, combine gelatin, water and reserved juice. Cook and stir over low heat until gelatin is dissolved. 1 (6 ounce) box lime Jell-O gelatin
1 (20 ounce) can crushed pineapple, juice reserved
2 cups boiling water
1 cup of reserved pineapple juice (you may have a little less)
1/2 cup cold water
8 ounces sour cream

Steps:

  • Drain pineapple and reserve liquid.
  • Spray Jello mold or bowl with PAM cooking spray.
  • Dissolve Jell-o in 2 cups of boiling water, stirring for a few minutes.
  • Add enough cold water to the reserved pineapple juice to equal 1.5 cups, and add to Jell-o mixture.
  • Whisk in about 8 oz. sour cream (mom used a little less).
  • Dump pineapple inches.
  • Chill until set.
  • If you want to unmold the dish, set bowl into warm water for 30 seconds, and place plate on top of bowl.

This recipe has been in our family forever. It can be made in many different variations. Cottage cheese instead of or in addition to cream cheese. Crushed pears or mandarin oranges in place of pineapple. The amount of ingredients seem to not matter much because I often forget how much jello or cream cheese, etc to use but it always tastes great. The only word of caution is NEVER use fresh pineapple in jello because it will not gel.

1 cup hot water
1 cup ice cube (optional)
1 (5 ounce) package Jello gelatin
1 (8 ounce) container Cool Whip

  • Dissolve jello in hot water. If in a hurry add ice cubes to set a litte faster.
