PINEAPPLE CREAM CHEESE SALAD
My first taste of this was at a covered dish. Ohhh, how I remember that surprisingly delicious taste! I am thankful that the lady shared her recipe with me. It has become a family favorite. Whenever I carry it to a covered dish everyone asks for this recipe. Sometimes I use it as a gelatin salad and other times, as a desert. It is great served with angel food cake. EASY ELEGANT COTTAGE CHEESE AND PINEAPPLE SALAD
Individual servings of a very colorful starter or attractive salad on the side which can be made ahead of time. Super easy for a beginner cook and good for you too! Before you think, eeks, mayonnaise, give it a try, it works really well. Of course you could omit the mayonnaise if you prefer. When we were kids my mom used to make this for us for lunch or for salad at dinner and we all loved it! :)

I warn you: it is an acquired taste, but it goes great with anything. To me, when I think of northern central Louisiana cuisine/southern food, this is the "salad" I think of.

Steps:
- Pour the Jello mix into a heat proof bowl, about 4 cups in size. Carefully pour in the boiling water and stir until gelatin is dissolved. Refrigerate about 50 to 70 minutes. You want the gelatin to be liquid enough to easily stir things in thoroughly, but stiff enough to suspend things evenly without separating into layers.
- When the gelatin is about the right consistency, stir in the cottage cheese and the pineapple with all of the juice. Stir until everything is evenly and thoroughly mixed together. Cover and chill until firm, about two hours.

Steps:
- 1. Pour drained pineapple chunks, marshmallows, nuts, and velveeta cubes into a bowl and toss to combine. Set aside.
- 2. Mix reserved pineapple juice, sugar, and cornstartch in a small saucepan. Beat in eggs. Cook until thick. Add butter.

- 4. Whip cream until soft peaks form. Fold into cooled pineapple and cheese mixture. Chill for a few hours before serving.
Tips:
- Use fresh fruits: Fresh pineapple and grapes are essential for the best flavor. If you can't find fresh pineapple, you can use canned pineapple, but be sure to drain it well and rinse it before using.
- Chill the salad before serving: This will help the flavors to meld and the salad will be more refreshing.
- Use a variety of cheeses: This will add different flavors and textures to the salad. Cream cheese, cottage cheese, and cheddar cheese are all good choices.
- Add nuts or seeds for crunch: Walnuts, pecans, and almonds are all good choices. You can also use sunflower seeds or pumpkin seeds.
- Serve the salad on a bed of lettuce: This will add a fresh, green flavor and make the salad more visually appealing.
Conclusion:
Pineapple cheese salad is a classic dish that is perfect for any occasion. It is easy to make, refreshing, and delicious. With its combination of sweet, tangy, and creamy flavors, it is sure to be a hit with everyone. So next time you are looking for a quick and easy salad recipe, give pineapple cheese salad a try.
